I made my first calzone yesterday. I bought pizza dough at the store, but when I baked it, the crust came out more like a pretzel than a calzone.

What did I do wrong?

I make calzones all the time at home with the canned dough. (Pillsbury). This is what I do.
Take the canned dough and unroll it out on a greased pizza stone. Cut the dough in half width-wise.
Place the desired toppings on half of each piece, and fold to seal the edges. Rub the tops with olive oil, sprinkle with parmesan and basil. Bake at the temp and time that is listed on the can (I think that its 400 for 14 minutes.)

They come out crispy and delicious.

If you used frozen dough it would not come out right, I make them all the time and I go to Dominoes to get a dough ball from them, keep it moist and roll it out with flour, then baste an egg wash on it as I bake it at 425 untill dough is golden brown. Frozen dough will not work as well as dough that has too much yeast and not enough malt

Italian Kitchen Chicken Crescent Calzones:

35 min 10 min prep
4 servings
4 Calzones

1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls
6 ounces sliced oven-roasted chickens (4 2 oz slices from deli)
4 ounces sliced monterey jack cheese
1 (8 ounce) can Green Giant Mushroom Pieces and Stems, drained
1 egg, beaten
1/2 cup Progresso Plain Bread Crumbs
1 (12 ounce) jar chicken gravy
1/4 cup sliced green onions
1/4 teaspoon paprika

1. Heat oven to 375°F.
2. Spray cookie sheet with nonstick cooking spray.
3. Separate dough into 4 rectangles.
4. Firmly press perforations to seal.
5. Press each to form 6x5-inch rectangle.
6. Top each rectangle to within 1/2 inch of edge with slice of chicken, slice of cheese and 1 tablespoon of the mushrooms.
7. Reserve remaining mushrooms for gravy.
8. Fold dough in half, forming a square; pinch edges to seal.
9. Dip each calzone in egg; coat with bread crumbs.
10. Place on sprayed cookie sheet.
11. Bake at 375°F.
12. for 20 to 25 minutes or until deep golden brown.
13. Meanwhile, in medium saucepan, combine gravy and reserved mushrooms; cook over medium heat until hot, stirring occasionally.
14. Serve gravy over calzones; sprinkle with onions and paprika.

I have used frozen bread dough. Thaw and roll into desired shape. Tastes great.
