If this really bothers you,look at them straight in the eye and say "you must have confused me with someone that gives a toot!" after that rude comment, they will probably not want to talk to you, or better yet ask them to explain what kind of flaps, plain,split, slotted, or fowler flaps, are they manually lowered/raised?or electrically?or hydraulically, what kind of hydraulic fluid? how the flaps work and why they are necessary, same with the landing gear etc. or you could call them on their supposed knowledge and say its not not the flaps, thats the spoilers, re: the gear, say Its not the gear, but the gear doors swinging open .
Or......you could just be a good neighbor and ask them how their mom is doing, or any thing to change the subject..

I agree that is annoying. They probably are scared or they are just trying to impress you. I have to travel in the back quite a bit and I always hate it when people ask me if I am flying the plane. "Uh, No. I am sitting in the seat next to you. If I was flying it I would be upfront." Of course I never word it like that. I just politely say that no, I will be riding back here today.
To Regan C.-- I am a pilot and I have to fly in the back sometimes to get to my next flight. What do you want me to do, change into civilian clothes for the flight and then when I get there change back. For your info, my airline and most others do want their employees traveling in uniform when they are on official business.
If I have someone next to me that wants to talk, I will just sit back and close my eyes. Eventually they get the idea that I want to sleep and will shut up.

its very annoying if they are trying to impress you, but if they have a fear of flying then i can understand. and IFlyGuy most airlines dont want you to wear their uniform when you fly a jump seat in the cabin

please try to be a little more tolerant of your fellow passengers. These types probably have a fear of flying, and making these commentaries are their way of overcoming their fear. Is it really that bad? You are awfully childish, selfish, and silly.
