OVERNIGHT EGG DISH (GREAT FOR EASTER)

16 eggs
12 slices white bread, cubed
2 lbs. sausage
4 c. milk
2 c. shredded cheddar cheese
2 tsp. salt
2 tsp. dry mustard

Mix together with spoon. Pour into greased 13 x 9 inch pan. Refrigerate overnight. Bake at 350 degrees for 35 to 45 minutes.

We just have a big buffet basically....every individual family brings a dish. My grandparents (now it's an uncle since my grandpa passed) always prepared the main meat dish...ham on easter & christmas & BBQed hot dogs & pork steaks for any other holiday. My family always brings a green bean casserole, another brings a salad, another brings their special mashed potatoes....etc.

Since I have such a large family, we have to do it this way otherwise it would cost too much for any one family. LOL! Let's just put it this way......my mom is 1 of 10 (all married so that's 20 kids for my grandma), I am 1 of 27 grandkids & there are about 13 or 14 GREAT-grandkids. That's A LOT of people to feed!

I make pickled eggs made with beets. My family loves them and I only make them at easter time. I use 2 cans of sliced red beets. Place them in a gallon glass jar, add 2 cups sugar, 2 dozen boiled eggs that have been peeled. Can be cut in half. This will pickle the yolk of the eggs. Fill container with apple cider vinegar. Gently stir. Seal with a lid and do not open for about 24 hours. They taste just like pickled beets. The will turn redish purple in color from the beets juices. Try it you might really like it. My family loves it but I know that it is not for everyone.

Spiced baked ham (basted with a reduced mixture of orange juice, mustard, molasses, horseradish and spices), sweet potatoes baked with the ham, green beans with bacon and garlic, home-made dinner rolls dripping with butter.

By the way, if you buy a ham don't get one that says water added, or ham and water product. If you do the ham will be mushy.

Tuck in, Jesus did. He was having his last good meal, I doubt he would've fasted with just soup and bread. Bring on the lamb, bread and wine! Nothing like a roast lamb, veges, cranberry jelly. We're having pavlova for dessert.

Every year my Dad makes Tia Maria's (top secret) Fritatta for Easter Brunch. He won't let any of us see the recipe, but we all know what's in it! LOL

Lamb with roasted red potatoes and red cabbage or asparagus. For lunch we have deviled eggs, cold cuts and fruit/veggie trays.
