Roman Catholics and some other Christians do not eat mammal or bird meat on Good Friday, just as they do not on any Friday on Lent, because they are fasting.
Here's a few links on fasting for Catholics - from whom all Christians who fast got the custom. The last link is about variety of faiths including non Christians who fast: when, how, and why.

The observance or, the word "Good Friday"
is not in the Bible. Not eating meat on Friday
is also not in the bible. I used to observed
all that; before I became a Bible guided
Christian, but in that day I took advantage
that I had that day, and the rest of the weekend off from work; to get drunk, fornicate,and other sins, that were worst than not eating meat. That is called a dogma
or dogmatic teaching that has nothing to
do with sound bible teaching. Bless you dear.

To abstain from meat on Ash Wednesday and the Fridays of Lent through Good Friday is part of fasting and sacrifice.
In the olden days meat was hard to get and very special.
We don't find that such big a deal now for us with food so easy to obtain. But for some its very hard to skip it for the full day and for some its not hard at all .so they can do that plus some other sacrifice like skipping coffee for the day. It's a reminder of the day.

You can eat whatever you please on any Friday or any other day of the week for that matter. What will happen to you is that you won't be hungry after you eat whatever it is that you choose.
Some, due to doctrines & traditions from men, think that you should not eat meat from mammals. The Bible doesn't teach that, but it does warn of those who do teach it.
King James Version
1 Timothy 4
1Now the Spirit speaketh expressly, that in the latter times some shall depart from the faith, giving heed to seducing spirits, and doctrines of devils;
2Speaking lies in hypocrisy; having their conscience seared with a hot iron;
3Forbidding to marry, and commanding to abstain from meats, which God hath created to be received with thanksgiving of them which believe and know the truth.

You can believe that without a doubt I will eat meat this Friday and do so without sin. Paul warned against many of the things that catholics as well as other Christians practice.

I think your supposed to eat lamb according to the word. They Cooked it over fire, not to be boiled or prepared otherwise, then they ate quickly. All other meat (leftovers) was to be burnt in the fire and no non-israelites were to eat unless they were sanctified and gave their life to christ, lest the family that gave them to eat be scorned.

Because the Catholic Church said so. This is not a rule that is found in the bible. This was not instituted by God. So eat away.
