I don't know what the exact rules are in Oz, but the general food safety rules say that long nails in general are a health hazard because of food and dirt getting trapped under them and breeding bacteria. Gloves would be more difficult to wear should you need them. Acrylic nails (especially if painted) can chip or break since you're using your hands all the time and may fall into the food or drink you're serving.
For something that costs a lot in upkeep even in normal use, wearing them at a manual job is asking for trouble.

Check out this website, it's for the UK but the principles are really universal.

You could try googling for "ServSafe" or "HACCP" and those will give you guidelines. When I took those classes they said that nails had to be short, real, and unpainted, and only a wedding ring was allowed on the hand.

Otherwise paint could flake off into food, food gets under nails, or a nail could break off and land in the customer's food.

short neat nails are nice and also neat. I dont like long nails because dirt can get under all of them and it look nasty
its digusting and gross when somebodys nails tend to be all chewed up to the ending.
