how come the v8 z06 can make 500hp naturally aspirated while the v10 makes the same 500hp even with the twoo extra v's. what happened? and which ones better? I'm planning to turbo and nitro it.

There is one more v. Imagine it as 5 small Harley V-twins mated together instead of 4 big ones. The difference is displacement per cylinder. If the motors are of the same overall displacement. The motor with the smaller parts(pistons, valves, etc) can spin higher RPM more reliably and more efficiently. Just because it has the same peak horsepower does not mean it's the same at other RPM or that the torque output is the same.

There are not "more v's" in one engine or the other... in the case of a V8, this refers to an 8 cylinder engine with a V layout. A flat 8 would be a boxer engine with 8 cylinders. A V10 would be a 10 cylinder engine in a V layout (A V layout being two banks of cylinders which, when viewed front on or from the back, for a V shape).

Different configurations have different properties which make them more or less appropriate for certain applications. Further, you could easily have a 5.0L V8 and a 3.0L V10, meaning that the V8 in this case displaces 40% more volume! Though the V10 could also easily be a much higher revving engine which would give it more power... but also the power in that case would be more peaky with the larger displacement engine producing more low down power and continuing with more torque through the power curve.

Which one is better would depend on what you plan to do with it. And not all engines are good canidates for a turbo and/or nitro (very few engines that are designed to be normally asperated are ideal for adding a turbo).
