1. Mashed potato casserole: 10 yukon gold potatoes cooked until fork tender in chicken broth, drained. 1/2 cube butter, 1 4 oz package cream cheese, 1/2 cup sour cream, 1 cup sharp cheddar cheese,1 bunch scallions, chopped, more butter and cheese to top with. Add next 5 ingrediants along with a generous portion of kosher salt and fresh ground pepper. Add more sour cream if necessary. Top with cheddar cheese and dot with butter. Cover and bake in a 350 degree oven for 30 - 40 minutes, or until cheese is melted and bubbly.
2. Asparagas with pancetta bread crumbs: trim fibrous ends off of asparagas and cook until tender crisp, about 1 minute. Set aside. In skillet, saute pancetta with 3 T minced onion and 1 tsp minced garlic. Add 1 cup bread crumbs and stir to coat. Add 1 tsp lemon zest and 3 T parmesan cheese. Place asparagas in baking dish and sprinkle with bread crumbs. Drizzle olive oil or melted butter over each and bake for 20 minutes at 350 degrees.
3. Strawberry Angel Trifle: 1 store bought angel food cake, 1 large package vanilla instant pudding, 1/2 cup sour cream, 1 1/2 cup milk, 2 pints strawberries, cleaned, stemmed, and sliced. Sweeten and mash slightly with spoon. Coolwhip. Tear angel food cake into pieces and top with some of the berry mixture. Blend sour cream with milk and pudding and fold in 1 cup of the CoolWhip. Put 1/2 on top of the strawberries. Repeat layers ending with strawberries and Coolwhip.

Candy Sushi Rolls
1/4 cup butter
4 cups mini marshmallows
6 cups crisped rice cereal
20 to 25 gummy worms
1 to 2 boxes fruit leather
Directions
Grease a 12- by 17-inch baking sheet. Melt butter in a 2-quart saucepan over medium heat. Add the marshmallows and stir until smooth.
Remove the mixture from the heat and stir in the rice cereal until it's evenly coated. Turn the baking sheet so that the shorter ends are at the top and bottom. Then press the marshmallow mixture onto the sheet, distributing it evenly.
Starting at one side an inch up from the lower edge, place gummy worms atop the mixture end to end in a hortizontal line. Gently roll the lower edge of the marshmallow mixture over the gummy worms.
Then stop and cut the log away from the rest of the mixture. Use the same method to form 4 more logs. Slice each log into 1-inch-thick "sushi" rolls and wrap them individually with a strip of fruit leather.
Makes 4 to 5 dozen.

Easter Pizza
2 loaves frozen bread dough (thawed)
1/4 lb mozzarella cheese
1/2 lb ham
1/2 lb provolone cheese
1/2 lb genoa salami
1/2 lb swiss cheese
1/2 lb capicola
1/2 cup parmesan cheese
6 eggs (beaten)
pepper
Oil bottom& sides of lasagna size pan.
Knead& roll doughs 2 inches longer than pan.
Place dough in pan, stretch it 2 inches past sides.
Layer ingredients, meat, cheese, meat, cheese.
Pour the beaten eggs over the top of layers.
Cover top with other kneaded, rolled, stretched dough.
Pinch together, all around pan.
Brush top with egg wash.
Bake 375 degrees 40 minutes.

Coconut cake
1 box of white cake mix
1 tub of white frosting
1 2cup bag of coconut
Make the cake according to the recipe on the box. Frost and cover cake with coconut, masking the sides.
Fun Easter variations
Stick Peeps (r) around the sides of the cake
Save some of the coconut and use green food coloring to dye it, add small chocolate eggs, animals or Peeps
