The best time of year is at the start of the dry season (now) as the water falls are still running. It is also less humid at this time of year, just perfect temperatures. Also try Lytchfield NP, has many pretty falls, no Saltwater crocs so you can swim safely in the swimming holes.

In the Dry, from May to October. If you want to see the waterfalls actually flowing, go early in the Dry. The falls stop quite soon. The Park decides when to open places like Jim Jim and Twin Falls. The decision is based on the condition of the access tracks (they flood in the Wet, and have to dry out) and whether any saltwater crocs have moved into the area. They don't worry much about freshwater crocs. They trap the salties and move them. Other parts of Kakadu are generally accessible all tear.
There is a place called Litchfield Park, to the south of Darwin, that has excellent waterfalls and swimming holes that are accessible all year.

Darwin and Kakadu are about 10°S. That is very close to the equator. The maximum temperature is in the low to mid 30s all year round. Heat goes with the latitude - you are in the tropics. The dry season is the time to visit. The Arnhem Land Highway has just re-opened so any time from now would be good.
