I've seen recipes doing it both ways. I tend to beat the egg(s) and pour it into the rice, so I don't dirty two pans.

I beat the egg with a teaspoon of water. Not too hard.... I usually use a pair of chop sticks. If you beat too much, you incorporate air which insulates and interferes with quick cooking. Heat about a tablespoon of peanut oil in the wok until nearly smoking, dump in the egg and stir quickly. Before it is completely done, slide out onto a plate. Add more oil, stir fry the rice and ham and peas and soy sauce. When nearly done, break up the egg and dump it in. Toss around for a bit and serve.

While cooking the rice scramble the egg separatley in a different pan. When you add all of your other ingredients to the rice add the egg in as well.

The way I do mine is to make sure that the pan is warmed and them scramble the egg until fully coocked. If you would like to add some flair.... add a little soy sauce to the egg while scrambling.

my grandma used to just beat the eggs and the pur it in slowly while stiring the fried rice, but then she had a wok and the pan was super hot.
I prefer to beat the egg, scrample it in a seperate pan, add it to the rice, use a spatula to shop it up in the rice and then mix it in.

just scramble the egg with a little soy sauce and cook it like you are making scrambled eggs once cooked add to your rice mixture

scrambled egg is added last to not over cook the egg..you just make is seperate in another pan
