Beer Batter
1 12 oz can light Beer
1 1/2 cups Flour
1/2 tsp Salt
1 tsp Paprika
1 more cup Flour (for second coating)
Pour the beer into a large bowl. Sift the flour, salt, and paprika into the beer, whisking until the batter is light and frothy. Heat at least 2 inches of oil in a frying pan or electric fryer. Just before it reaches 375F, quickly dredge the fish and shrimp with flour, shaking of excess then dip in the beer batter, coating well, and drop them into the hot fat (do this in 2 batches). When they are brown on one side - less than 1 minute - turn and brown them on the other side. Drain on paper towels. Serve hot with lemon wedges.

Basic Beer Batter:

This is the only batter recipe I use, and I find it works the best for all types of foods.

1 day 10 min prep
8 servings

1 cup flour
1/4 cup cornstarch
1/4 teaspoon cayenne pepper
1 teaspoon garlic salt
3/4 cup flat beer
2 eggs, lightly beaten
2 tablespoons vegetable oil

1. Combine all dry ingredients.
2. Add liquid ingredients and mix well.
3. Allow batter to chill in refrigerator for a least 1 hour before using.
4. Dip food in batter and place into hot oil.

Ok here's my recipe:
I usually eye most ingredients because it changes due to humidity.

Start off with 1/2 cup buttermilk and combine with 2 eggs
Then add 1tsp garlic salt 1/4 tsp pepper. whisk in a half cup at a time self rising flour. when it gets to pancake batter consistency I usually add 1/4 a bottle of sam adams. whisk again. and add more flour gradually until you get a thick pancake batter. cover with glad press and seal and refrigerate until ready to use. I then cut up chicken into cube dip in beer batter and roll in panko bread crumbs and drop into the fryer. You can omit the bread crumbs if you wish but I find it gives a nice crunch. This is a very light batter and my boyfriend loves it hope it works for you

1 cup Bisquick
1/2 teaspoon onion salt
1/4 teaspoon garlic powder
1/4-1/2 teaspoon cayenne pepper
1 beaten egg
1/2 cup beer
Crisco cooking oil

Rinse chicken.
In a large saucepan, cover chicken with lightly salted water.
Bring to boiling; reduce heat.
Cover and simmer for 20 minutes.
Drain.
Pat dry with paper towels.
For batter, in a bowl combine bisquick mix, onion salt, garlic powder, and cayenne pepper.
In another bowl stir together egg and beer; add to bisquick mixture.
Beat until smooth.
Meanwhile, in a heavy 3 quart saucepan or deep fat fryer heat 1 1/4 inches of oil or shortening to 365 degrees.
Dip chicken pieces, one at a time, into batter, gently shaking off excess batter.
Carefully lower into the hot oil.
Fry, two or three pieces at a time, for 2 to 3 minutes or until golden brown, turning once.
Drain well on paper towels.
Keep warm.

My favorite is Tempura "flour" mixed with Sierra Nevada 's Pale Ale. Mix in a little Thai chili sauce for a little heat. Mix to a pancake batter consistancy.

Here's mine. 2 cups AP flour, a pinch of salt, a lot of black pepper, cumin, and cayenne. Whip all that up with one 12 oz light beer, the cheaper the better. (Believe me, cheaper beer is better, like Old Mill Lite.)
