I'm interested in finding an organization similar to Doctors Without Borders, where I can go volunteer in a different country during my summer off from college.

Well, I belive Habitat for Humanity has programs, but I'm not sure if they're out of the country or not. You may want to contact someone with the Peace Corps to see if they have any summer programs.
