If you do not have enough taxes taken out and end up owing for the 2007 tax year, the IRS could send your employer a lock-in letter telling your employer to deduct as if you were Single with one exemption, no matter what you can actually claim as exemptions.

As many as you want. I would be careful though, if you don't have enough withheld from your paycheck, you will end up owing taxes when you file your return and if it is a large enough dollar amount, there may be penalties and interest.
