Eggs and ovulation....
Estrogen affects fertility and those rabbits are fertile little buggers!
All that Easter candy is fattening and fat produces excess estrogen.
Oh, and PMS makes us crave chocolate. As long as the bunny hands over those Cadburry eggs, nobody has to get hurt.

It has something to do with Constantine's mixing of pagan gods and rituals with Christian practices during the time of his rule like mixing a fertility goddess with the Easter celebration, which is were the eggs come from, so that Constantine and his paganistic followers could worship their gods with Christians during the Easter celebrations.
