Fajitas. I love chicken fajitas. I also have the stuff for tacos on hand and my kids love them. I set everything out and let them make their own.

stuffed bell peppers
mix 2 lbs raw ground beef with about 1/2-3/4 cup cooked white rice and about 1/4 cup of tomato sauce. add in seasonings such as salt and pepper and garlic. The mixture should feel wet but not gooey and can still hold its shape.
Core 6 bell peppers (whatever color you choose) and then fill it with the mixture. (don't pack it in just fill it). If extra meat then put in the pan around the peppers and cover the entire entree with the remaining tomato sauce. Bake in the oven at 375 for 30 minutes or until meat is cooked thoroughly

Chicken Marsalla
Dust chicken cutlet with flour, salt and pepper
Brown chicken cutlets in a pan with a little olive oil
Remove chicken from pan. Brown 1 tablespoon of minced garlic, add about 2 cups of marsalla wine. Heat until alcohol burns off, add fresh sliced mushrooms, and return chicken to the pan. Heat until chicken is 100% cooked and mushrooms are tender. Serve over angel hair pasta.

Fried potatoes, onions and sliced sausage. It's cheap and easy. You can also add a can of Bush's baked beans over the top, and make the meal stretch a little more. Another cheap & easy meal is Spanish rice, diced tomatoes, a bag of California blend veggies and sliced sausage (yeah, we eat a lot of sausage, 'cause it's cheap). Also, we buy those all in one meals in the box (Homebakes) that are really great if you throw a bag of frozen veggies in them, especially the ones that already have veggies included. It makes the whole meal stretch a little farther. Hope this gives you a few more ideas. <*)))><

I'm making my enchiladas
Preptime 1 hour 25min
2-3 boneless skinless chicken breast
3 cans refried beans
4 cans (small cans) sliced olives
1-2 big bags of cheese and 2-3 for extra cheesy
2 cans of enchilada sauce (red)
corn tortillas cook about 16 in oil.
Preheat over to 350-375
Boil chicken 30-40 min
Sauce- put the oil in first, enought to cover bottom of pan. wait til very hot then put in flour until thick and cook until brown keep stiring as you add the sauce. cook that about 20min and make sure it stays warm.
Mix- cooked beans, shered chicken, and olives mix all together until well mixed
Fluff tortillas (not to long you dont want then hard so about 2 seconds on each side) cook about 16
cover the bottom of the backing pan with sauce not to much sauce.
Take each tortilla and dip it into the sauce pan and then put it in the baking pan put in the bean mix add some chesse as much as you would like roll up the tortilla and just keep doing that til you are out of tortillas or until your pan is full.
Then cover all the tortillas after you have rolled them with chesse add as much as you want.
Then put it in the over for about 15min or until cheese is melted..
Enjoy they are so good, ive never givin this out.

goulash and creamed potatos
i dont really have measurements, its too easy to mess up. just use however much looks alright.
you will need:
hamburger meat (a pound or two)
an onion
elbow noodles
potatoes
milk
chilli powder
onion powder
garlic powder
salt and pepper
boil your choice of pasta ( i like the small elbow noodles). strain.
in a seperate pan, boil some chopped potatoes, just covered with water.
brown a pound of hamburger meat with chopped onions. season with garlic, onion powder, salt and pepper. ( i like to throw in some chopped garlic too, but im a garlic lover)
add the hamburger to the pasta with 2 cans of tomato soup (with out adding the water. you can use tomate paste too, but right now i just have soup). If thats not enough tomato sauce add another can. season with lots of chilli powder (thats where all the flavor comes from) and more onion and garlic powder, and any other seasonings you like. cook over medium heat until warm.
when the potatos are soft, dump out half the water and put in some milk. mash the potatos. you want this creamy, not like regular mashed potatoes. add salt and pepper to taste. its good with ALOT of pepper.
and thats it. really good, really easy.

I'm having beans and rice-- but I'm in that mood.
I also like making up casseroles-- Cook up some instant rice, add a can (or 2) of cream of whatever (mushroom, chicken, broccoli, etc), any veggies that you have, and some left over COOKED meat (I like chicken but whatever)-- Mix all the ingredients together and put it into a casserole dish-- put it into the oven on 350 until it's hot. If you like, throw some shredded cheese on it after you pull it out...
How's that?

Bourbon Chicken and Rice
INGREDIENTS
1 tablespoon butter
2 tablespoons olive oil
1 clove garlic, minced
1 onion, chopped
4 skinless, boneless chicken breasts
2 tablespoons chicken stock
2 tablespoons bourbon
salt and pepper to taste
DIRECTIONS
In a large skillet, melt butter or margarine and add olive oil. Saute garlic and onion until translucent. Remove garlic and onion from skillet with a slotted spoon.
Add chicken breast halves to skillet and brown on both sides. Return garlic and onion to skillet. Add broth and bourbon and stir all together. Cover and let simmer over very low heat for 20 to 25 minutes, or until chicken is tender and done (chicken juices run clear).
Serve over cooked white rice.
