well actually I made sugar cookies with someone I know named sarah and it was with shortening rather than eggs. Let's just say they weren't the best

No - a cookie dough without eggs would taste about the same as one w/ eggs. The problem is the texture of the raw dough wouldn't be very good & it won't set well after baking.

You can substitute apple sauce or prune sauce for the eggs if you are trying to cut out the fat, but it really doesn’t taste the same. You can also use refrigerated egg product.

If you are just making the dough to eat raw, and are worried about the raw eggs, then just add a little extra butter and water to the dough. However if you cook it that way, they will be a mushy mess and not cookies.
