For a present that need to be shipped, I'd advise a fruitcake. You know, the ones that are soaked in brandy for 3-4 months... Since brandy has anti-microbial properties, your cake is sure to last a LOOONG time. No icing required!!!

All I could think of is to pack it with some dry ice and ship by overnight air. How would you pack it so the icing doesn't get messed up?

fundit its almost like a paste and it lays over the cake I might not have spelled it right but its firm and the cake stays moist

fondant. you know, the stuff they use on ace of cakes? that stuff lasts forever... this is a easy (and good) recipe for marshmellow fondant)
