Unless you know she's into dark gothic imagery, or has a thing for black, I wouldn't. She might think it's offensive.
Being an atheist doesn't automatically mean that the person loves black nail polish, dresses in heavy metal t-shirts, and listens to dreary goth music day and night.
Buy the gal some nice white roses. Those would be classy.

Does the color black associate itself in any way to Atheists? If so, then yes, black roses would be appropriate. I think that any kind of flower would be a nice gesture. Just because he/she is Atheist doesn't mean the flowers have to be black. That, to me, is somewhat depressing. Good luck and have fun!

I hope you don't invite her for breakfast. And yes, black roses would be fine, if you can find them. She'd directly know what kind of weird person you are, and she's probably leave asap.
Most atheist are very intelligent and well thought people, so I guess she doesn't want to spend too much of her precious time with you.

No. If you found out your date was a devoted christian would you bring her a crucifix or some holy water? Just because she is an atheist doesn't mean her existence or social life revolves around the "atheist" theme. I bet red roses would be fine.

It depends on several factors. If he or she is one of those quasi-gothic types of atheists who wonders why the glass even deserves to have water in it, let alone half empty, then black roses would be an ok gift, second only I guess to a blade he or she can cut themselves with.
However, if your comment is aimed to stereotype the atheist sect of society, you are sadly wrong.
Most atheists don't fit under this category at all. Alot of my clients are atheists, and most are under the belief that; "I'd rather trust someone who is good because he feels that it's the right thing to do, than someone who is good because he is afraid of some higher power watching."
Most atheists are very educated, very logical, prefer to ask questions, and not afraid to put doubt on any claim and see if it can survive the test. In my faith, "Judaism", you are seen as an atheist if you are not god-fearing. I guess the same can hold true for most other faiths aswell, which is why people often think of atheists as dark, devilish, gothic, evil people.
Anyhow, back to your date. If he or she is an atheist, keep an open mind, and think twice before raising heated questions like, "do you believe in abortion", unless you really want to hear a rational answer on your first date.
Black roses are something out of the ordinary, and generally not that attractive. Red roses are very classic, but sadly overplayed and quite unoriginal. If being unique is your goal, you should research statistics on flowers women find to be their favorites. The majority of women say "roses", but statisticians believe this has to do mostly with the huge effect of the commercialized holiday of V-day. Aside from roses are:
2nd place- Lillies
3rd place- Tulips
4th place- Orchids
5th place- Jasmine & Lavender
6th place- Sunflowers
Now, I really think you should stop at Orchids, mostly because i'd feel pretty shocked if someone walked up to be with a sunflower.. lol..
Colors also play an important role in flower selection. But before you can tell anything about what flowers she would like, you have to know what type of person she is, or at least how you see her; and how you want her to think you see her.
Red roses are a very bold statement, because they are linked with V-day, they tell a woman "I like you, I want you to be my girlfriend". If you are already in a relationship, this is a fine gift to make, but even Tom Cruise couldn't pull this one off on a first date; maybe George Clooney.
Yellow roses suggest she is a free spirit, these are perfect gifts for people who are hair stylists, fashion designers, home decorators.. they say, "I think you're a free spirit".
Pink roses suggest that she is still young; perfect for someone still in the early stages of life, like a sweet 16, in college.. they say, "you're still a kid, but i'm happy to be with you on this occasion".
Blue roses and lillies suggest the person is very intelligent, perfect for someone in a professional occupation like medicine, law, accounting, economics, dentistry, vets, engineering, biochemistry.. they say, "I think you're very smart, and very intellectually stimulating".
Tulips of all colors are like yellow roses yet with one subtle difference, they suggest the person is playful. they say, "I love the child within you and the way you know how to have a good time".
Lastly, orchids are more than something you show up with on a funeral. Orchids suggest the person is very creative and thinks deep. they say, "i love your creative side, your ideas, and your sense of taste."

I prefer daisies or tulips myself, but everyone's different.
