Quick Ranchero Chili From: Campbell's Kitchen Prep/Cook: 20 minutes Serves: 4 Ingredients: 1 lb. ground beef 1 medium onion, chopped (about 1/2 cup) 2 tbsp. chili powder 2 tsp. ground cumin 1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup 1/2 cup water 1 can (about 15 oz.) small red beans or red kidney beans, rinsed and drained Shredded Cheddar cheese Directions: COOK beef, onion and chili powder in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat. ADD soup, water and beans. Heat to a boil. Cover and cook over low heat 10 minutes. TOP with cheese.

1 lb. ground beef or ground chuck, browned
1 can each kidney beans, black beans and pinto beans, do not drain or rinse, you want the starch in the cans so that sauce will thicken
2 cans mushroom pieces and stems (optional)
1 large (46 oz) can of tomato juice
1 can diced tomatoes
1 onion, diced
1 green pepper, diced
1 jalapeno pepper, minced (optional)
1 tbsp. cumin
3 tbsp. chili powder
Combine all ingredients in a large pot, simmer over medium-low heat, stirring occassionally to keep from scorching the bottom until chili has thickened. Add more chili powder, cumin and jalapeno to your taste.

1 pounds ground beef
1 can kidney beans
1 can tomatoes (crushed, chopped, or stewed, your preference)
1 small can tomato paste (this helps to thicken the chili)
1 pkg. dry onion soup mix (adds flavour, and you don't have to chop onions)
1 green pepper
1 tblspn. (or more) chili powder
You can brown the beef before adding the other ingredients, but it's not neccesary. Add about 1/2 tsp. salt and 1/4 tsp. pepper. You can throw in a bay leaf if you want. If you like it hot, add cayenne or hot pepppers.
Simmer for about 45 min or 1 hour at medium heat.

INGREDIENTS
2 tablespoons vegetable oil
1 pound lean ground beef
1 cup chopped onion
2 cloves garlic, chopped
2 (15 ounce) cans black beans
1 (28 ounce) can crushed tomatoes
2 tablespoons chili powder
1 tablespoon distilled white vinegar
salt to taste
ground black pepper to taste
DIRECTIONS
In a 2 quart saucepan, brown hamburger in vegetable oil. Add onion and garlic, and cook until the onion is soft. Pour off any excess fat.
Stir in beans, crushed tomatoes, chili powder, and vinegar. Salt and pepper to taste. Heat to boiling, and reduce heat. Cover, and simmer 30 minutes.

Brown 1 lbs hamburger meat along with one onion and one green bell pepper. Drain well.
Move meat mixture to large crock pot.
Add two cans kidney beans and one can diced tomatoes. Add chili seasoning to suit taste. Cook on low setting for six or seven hours. Add water as needed.

My mom taught me this:
Whole Peeled tomatoes (2 big Cans)
1lb of Chop Meat
2 small cans of Dark Red Kidney Beans
Chill Powder
Salt and Pepper to taste
Directions: Brown and Drain Grease, Put Meat in Crock Pot, Squeeze and Crush tomatoes into pot by hand, not too messy (Dont add all the juice from them because it will be too watery but you can add tomato paste if needed), add beans and and chilli powder to taste
Serve with Sour Cream and Shredder Mexican Cheese, and Frittos for dipping.
I think I am going to make this tonight.
