Roast chicken --
Take a lemon or an orange, wash it thoroughly, and pierce it all over with a fork. Wash and otherwise prep a roasting chicken. Sprinkle the outside with salt and pepper. Put the lemon/orange *inside* the cavity of the chicken. Roast normally, basting throughout with it's own juices. Add cut potatoes for the last half hour or so, if desired, basting them directly only once with the juices, then letting the bottom brown.
Produces the moistest chicken I've ever made at home ;)

Your most favourite food that is easy to prepare. Who says you have to eat traditional anyway? My family eats prime rib roast with all the fixings at Christmas because we like it and it's easy for me to prepare. Easter time I make a stuffed turkey breast,for the same reason. The key to enjoying the holidays is little fuss for good food.

Generally my mom either makes a ham and a turkey. You can add the usuals. . . mashed potatos, stuffing, etc. I just usually eat the turkey! Or you could put a chicken in the rotisseree. . .that is always yummy!!!

It's Orange Roast Pork and it's REALLY easy and the whole house smells good while it's cooking!
.
INGREDIENTS:
1 (3-1/2 lb.) pork shoulder roast
1 onion, chopped
6-oz. can frozen orange juice concentrate
1/4 cup brown sugar
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. flour
2 Tbsp. cold water
PREPARATION:
Trim roast of fat. Place onions in bottom of 3-4 quart crockpot. Sprinkle salt and pepper over roast and place in crockpot on top of onions. In small bowl, mix together thawed orange juice concentrate and brown sugar, and salt and pepper, and pour over roast.
Cover crockpot and cook on high for 3 hours, then reduce heat to low and cook for another 3 hours.

I'm making a standing rib roast this year. It's a little pricy $5.99 a pound on sale, $9.99 regular, but it's definitely worth the price.

why not try some pork belly? this may not sound that appetising but its beautiful. trim some fat off, grate lemon lime orange zest slivers of garlic chilli and corriander and tie it into a log! drizzle with olive oil and oven cook at 160 for 4 and a half hrs! absalutely gorgeous.

Roast Beef
4 pound chuck or shoulder beef roast
3/4 cup flour (more or less)
salt to taste
pepper to taste
garlic powder to taste (optional)
8 patties butter
1 cup water
Dredge a 4 pound chuck or shoulder beef roast with a mixture of flour, salt and pepper. Place 3 or 4 patties of butter in bottom of roaster pan. Put meat in pan and put 3 or 4 patties of butter on top of meat. Bake at 350 F for one hour, uncovered. Add 1 cup of water, cover and bake for 2 more hours at 250 F.
Baby potatoes
1 pound baby red or white potatoes
2 T olive oil
1 T garlic, minced or pressed
1 T chopped fresh rosemary
salt and pepper to taste
Steam potatoes until tender (about twenty minutes). Sauté garlic in olive oil for a minute or two, then add rosemary and sauté another minute. Toss drained potatoes in garlic mixture. Season with salt and pepper and serve.
Lemon pepper brocoli
lb. fresh broccoli
3/4 C mayonnaise
1/3 C milk
1/2 tsp. grated lemon zest
2 T lemon juice
1/2 tsp. freshly ground black pepper
salt to taste
Trim large leaves and tough ends from broccoli and separate into spears. Steam for 8-10 minutes or until cooked to desired level of tenderness and transfer to serving platter. While broccoli is steaming, make sauce by combining mayonnaise, milk salt and pepper in a small saucepan. Cook over medium heat until thoroughly heated but DO NOT BOIL. Remove from heat and immediately add lemon juice and zest. Mix well and spoon over steamed broccoli.
Chocolate dipped Strawberries
oz. quality chocolate or white chocolate
about 12 - 14 large strawberries
Melt chocolate in a double boiler. Dip fresh strawberries in the melted chocolate until three quarters covered. Put berries on a sheet of waxed paper to cool, or alternatively, place one berry each in paper candy cups. Let set until chocolate hardens. You can hasten the process by placing the dipped berries in the refrigerator for a few minutes.
