The Jews rejected Jesus because He failed, in their eyes, to do what they expected their Messiah to do--destroy evil and all their enemies, in this case the Romans, and establish an eternal kingdom with Israel as the preeminent nation in the world. The prophecies in Isaiah and Psalm 22 described a suffering Messiah who would be persecuted and killed, but they chose to focus on those prophecies that discussed His glorious victories, not His crucifixion.
The Jews believed that the Messiah, the prophet which Moses spoke about, would come and deliver them from Roman bondage and set up a kingdom where they would be the rulers. Two of the disciples, James and John, even asked to sit at Jesus' right and left in His Kingdom when He came into His glory. The people of Jerusalem also thought He would deliver them. They shouted praises to God for the mighty works they had seen Jesus do, and called out "Hosanna, save us" when he rode into Jerusalem on a donkey (Matthew 21:9). They treated Him like a conquering king. Then when He allowed Himself to be arrested, tried and crucified on a cursed cross, the people quit believing that He was the promised prophet. They rejected their Messiah (Matthew 27:22).

Why single out the Jews? The Jews are only a small minority of those who do not recognize Jesus Christ for Who He actually is.

Because the person who will be the moshiach (messiah, or, I think in latin, christ) will be born the old fashioned way, and that is just the beginning of why jesus does not fit the bill, if you even want to go with the premise that the "nt" has any actual truth to it's depictions..

Christ being the son of God is a matter of belief and faith. Christians believe it, other religions do not.

The ones that do believe that Jesus is the Messiah, do believe that He is the Son of God. They're called Messianic Jews. The others don't believe because they are deceived and have a spiritual veil covering their eyes to see and understand. It takes faith for them to believe also.

Whenever the Promised One of a particular Faith appears, the majority of the followers of that faith deny Him. Therefore, when Jesus came, the majority of the Jews rejected Him. Similarly, most Christians rejected Muhammad when He came, even though He was the promised Comforter. The Muslims, likewise, rejected the Bab when He came, even though He was the promised Mahdi, etc.

Messianic Jews do, like me.

But most of the Jews have fallen in love with their traditions and religion.

And one of their traditions is to wait for Messiah. Also Jesus came in a way that was unpleasing to them.

Many Jews don't deny it.

Why do you care? Why can't you just leave us alone to believe what we want to and we'll leave you alone to believe what you want to? If you are secure in your faith, it shouldn't make any difference to you if others do not believe as you do...so why does it?
