It's a shoji (show-gee) mat. Sometimes it is also called a tatami mat. Generally, these mats are made very thick and are used as a floor cushioning on the wooden floors of the traditional Japanese houses. They are still used and made to this day. The one you're looking for is thinner and is generally used either dry for easy cutting for beginners, or wet for more difficult cutting by more experienced users. The organic material is actually rice husks.
