I have a bunch of Ramen Noodles around the pantry, and I want to do something more than just eat as directed. What are the best ways to doctor up Ramen Noodles to make something new?

ramen noodles are all about keeping it cheap as hell.

I'm a grad student, and can claim 'professional' status when it comes to ramen.

my faves are:

with stirfried frozen veggies (ramen + $0.50)

in tomato soup (ramen + $0.50)

with Louisiana Hot sauce (ramen + practically nothin')

with stirfried left over chicken stolen from free food at a university event (ramen + adventure)

Cheap Chow Mein Rather than boiling and eating the Ramen, I'll boil as directed, and then toss them into a frying pan. So cook the ramen without the salt packet. Then drain and set aside. In a large skillet, turn the heat to med/high. Add some diced onions and garlic. Add some meat like 1/4 c of diced chicken. Sautee for 3 minutes and then Add the noodles to the skillet and mix. Turn heat to med/low. Add 1/2 of the seasoning packet. Mix well, serve hot.

Beef Chow Mein
Fried beef chunks, ramen noodles, and stir fry veggies in a tehaki garlic sauce.

Marinade
4 cups of tehaki sauce
1 table spoon of roasted garlic
Season to taste-- I added chili pepper flakes and parsley but ginger would be fabulous

Directions
Marinade the meat, we used diced beef bottom round, dreg in flour, then fry. As the meat is cooking, boil plain noodles until they are crunchy but cooked. After meat is browned add the half cooked noodles, veggies and the marinade. Cook until noodles are done, then simmer for another five. Serve and enjoy.

This recipe makes 4 "pouches" so if you want to make just one,you'll have to do some math!

2 packages Ramen noodles
1/2 cup dried mushrooms, chopped
20 large raw shrimp, peeled and deveined
1/2 cup finely chopped onion
1/2 cup sliced scallions
1/2 teaspoon red pepper flakes
1/2 teaspoon kosher salt
1 quart vegetable broth
1/2 cup mirin
1/4 cup soy sauce
4 teaspoons sesame oil

Special equipment: 4 (18-inch) squares aluminum foil


Preheat oven to 400 degrees F.

Divide ramen noodles evenly in center of each of the 4 pieces of aluminum foil. Stack the following ingredients on top of noodles, in this order: mushrooms, shrimp, onions, scallions, red pepper flakes, and salt. Pull sides and corners of pouch up to form a small basket shape leaving an opening at the top to pour in liquid.

In small bowl, combine vegetable broth, mirin, soy sauce, and sesame oil. Distribute liquid evenly among packs. Press foil together, leaving a small opening to allow steam to escape. Place on cookie sheet and bake in oven for 15 minutes. Serve immediately.

Here is a dish that my family and friends love.
2 packages of ramen noodles chicken flavored
1can cream of chicken soup
1 can cream of mushroom soup
1 can sliced mushrooms drained
1 can chicken drained/ or leftover deboned chicken
1 tsp garlic
1 soup can of milk

In a large pot cook noodles and drain do not add seasoning package.
Add all other ingredients plus one seasoning package from noodles. Put on low heat simmer until sauce becomes creamy stirring occasionally. If you don't like mushrooms substitute for more chicken and a second can of cream of chicken. enjoy,

Chicken salad with ramen noodles

2 whole chicken breasts, boiled and diced
4 Tbsp toasted slivered almonds
4 Tbsp sesame seeds
1 head raw cabbage, chopped
2 Pkgs Ramen (chicken flavor) broken and uncooked
4 stalks green onions, chopped.
4 Tbsp sugar
1 cup salad oil
2 pkgs Ramen seasoning mix from the Ramen packages
1-2 tsp salt
1/4 tsp pepper
6 Tbsp vinegar

In large bowl, mix chicken breasts, almonds sesame seeds, cabbage, Ramen (chicken flavor) and green onions. Mix sugar, salad oil, Ramen seasoning mix, salt, and pepper and vinegar. Toss dressing with the cabbage mixture. Marinate 15-24 hours. Stir occasionally.

Ramen noodles and veggies

1 package Ramen Noodles
2 cups chopped assorted vegetables
soy sauce (to taste)

Prepare the Ramen Noodles in the Microwave or on the Stove as the package directions say.

While cooking the noodles put chopped vegetables in a microwave safe bowl with 1/4 cup water (Water should not cover the vegetables. You just need enough water to create the steam.)Cook vegetables on high heat until vegetables are bright in color and tender crisp.
Drain noodles and leave a small amount of liquid to mix with soy sauce the create juice/sauce for the noodles and vegetables.
Mix noodles, vegetables, and soy suace mixture in large bowl.

Asian Slaw

2 (3 oz.) packages beef-flavored ramen noodle soup mix
2 (8.5 oz.) packages slaw mix
1 cup sliced almonds, toasted
1 cup sunflower kernels
1 bunch green onions, chopped
1/2 cup sugar
3/4 cup vegetable oil (I used olive oil)
1/3 cup white vinegar

Remove flavor packets from soup mix, and set aside; crush noodles. Place noodles in bottom of a large bowl. Top with slaw mix; sprinkle with almonds, sunflower kernels, and green onion. Whisk together contents from flavor packets, sugar, oil,m and vinegar; pour over slaw. Cover and chill 24 hours. Toss before serving.

Break the block into smaller parts and add as a cruncy topping to salads.
I also sometimes cook up a boneless/skinless chicken breast cut up into bite size pices with some soy sauce or any other type of sauce and put it into the noodles.

Most creative use not consumable: Spray paint various bricks of noodles and make some artwork out of them.

THIS IS DELICIOUS! It's one of my favorite things to bring to family events, everyone enjoys it.

Chinese Cabage Salad

Dressing:

1/3 cup balsamic vinegar
1/2 cup sugar
2/3 cup olive oil
2 tablespoons soy sauce
Salt & Pepper to taste


Salad:

1 head Bok Choy or Napa cabbage, chopped
1 bunch green onions, chopped
1 pkg ramen noodles
4 oz slivered or sliced almonds
1 tablespoon butter
[I like to add roasted sunflower seeds as well]

Mix dressing ingredients.
Set aside.
Chop cabbage and green onions.

Crush ramen noodles. Discard flavor packet. Mix with almonds and butter and brown in skillet. Combine noodle and almond mixture with cabbage and onions; pour on the dressing and stir.

Try to serve this salad as soon as it is prepared or it will get soggy. I like to let it set for about 20 minutes so the noodles absorb the dressing just a little.

Sweet and Sour Chicken

1 cup red bell pepper, chopped
1 tsp. fresh gingerroot, peeled and chopped(I have omitted this and it doesn't make that much of a difference)
4 green onions with tops, thinly sliced
1 20 oz. can pineapple chunks in juice, undrained
1 pound boneless, skinless chicken breasts
2 pkg. chicken-flavored Ramen noodles
1/2 c. sweet and sour sauce

Drain pineapple juice into a 2 cup measure and add enough water to make it level. Set aside. Cut chicken into 1 inch chunks and stir fry 5 min until no longer pink. Add ginger root;stir fry 30 sec. Add pineapple juice and bring to a boil. Add noodles, broken into pieces, and seasoning packets. Bring to a boil and reduce heat. Simmer 3 minutes or untl noodles are tender and most of the liquid is absorbed. Add sweet and sour sauce, bell pepper, onion, and pineapple chunks; heat through. Serve immediately.

Asian Noodle Skillet Dinner

1 1/4 pounds boneless beef sirloin steak, trimmed
1 T. vegetable oil
2 C. water
2 pkg. Beef flavored Ramen noodles
4 c. stir fry vegetables(broccoli,red peppers, celery, carrots,onion) cooked

Cut steak lenghtwise in half and then crosswise into 1/4 inch strips. Heat in oil 2 min or until outside surface is no longer pink. Remove, keep warm. Add water;bring to a boil. Remove noodles from pkg and break into pieces; stir into water along with seasoning packets. Bring to a boil;reduce heat. Simmer 3 minutes or until noodles are tender and most of the liquid is absorbed. Return beef and 4 cups of the cooked vegetables to skillet; heat through.

Crunchy Coleslaw

1 lb. coleslaw mix
2 pkg. Ramen beef noodles, crushed
1 bunch green onions, cut up
1 c. sunflower seeds
1 c. slivered almonds
2 carrots, peeled into strips
Mix all ingredients in a large bowl, breaking up the ramen noodles. Dressing:
1 c. salad oil
1 c. sugar
1/2 c. vinegar
2 pkg. seasonings from noodles

Make dressing 1 day ahead;refrigerate. Mix all dressing and shake occasionally.

i have baked some chicken breast & steamed veggies & topped the noodles w/ that. i also cooked up some ground turkey w/ cayenne pepper & chinese five spice (w/ other seasonings) & cut up some celery, carrots, onions & cabbage, mixed it all together & topped the ramen w/ that ... those are just a couple of easy yummy things.
