Lower the heat of your stove, butter the outside of your bread the place in your skillet. Lay your cheese on the bread while it toasting. Check your food until the bread is lightly toasted and the cheese is melted.

On a grill or heavy fry pan under medium-low heat. A grill that is too hot will burn the butter. Stay with your sandwich with a spatula in one hand so you can raise the bread to check it's browning progress. After awhile, you will know how long it takes to brown each side. I toasted all sides of the sandwich bread and made a very rich & buttery cheese sandwich.
For one grilled cheese sandwich
Two slices of bread. buttered on all sides
One or two slices of American cheese
Place both slices on the grill. Flip both to the second side when the sides are lightly toasted. As the second side toasts, put your cheese on one of the slices. When the bread is toasted, place the other slice of bread on top of the cheese. Wait a few seconds until some of the cheese melts & sticks to the top slice so sandwich won't come apart. Take a spatula, flip the whole sandwich over once more to heat the top side of the sandwich a few seconds, then transfer to your serving plate. By then your cheese should be nicely melted and sandwich nice and hot.
Yum yum.
If you don't want it so rich, butter only one side. As your buttered sides toast, they will grease your pan. But then you'll have to flip it back after toasting unbuttered sides before placing cheese on top. One additional step.

Ingredients
12 paper-thin slices of 2-inch diameter salami, (about 1 ounce)
1/4 cup olive oil
8 slices olive bread (or use a hearty Italian or wheat bread), 1/4 inch thick
6 ounces Italian Fontina cheese, coarsely grated
Preheat a large nonstick skillet over medium heat for 2 minutes. Add the salami and cook until it begins to brown, 2 to 3 minutes. Turn and cook for about 3 minutes, or until the slices have begun to shrink and turn golden brown. Remove the salami from the skillet and set aside. Wipe the skillet with a paper towel but do not wash it.
To Assemble
Brush one side of each slice of bread with the oil. Place 4 slices on your work surface, oiled side down. Distribute the cheese evenly over the 4 slices, followed by the salami. Place the remaining 4 slices of bread on top, oiled side up.
Stovetop Method
Heat the same skillet over medium-high heat for 2 minutes. Put the sandwiches in the skillet (in batches if necessary), cover, and cook for 2 minutes, or until the undersides are golden brown and the cheese has begun to melt. Uncover, and turn the sandwiches with a spatula, pressing firmly to flatten them slightly. Cook for 1 minute, or until the undersides are golden brown. Turn the sandwiches again, press with the spatula, and cook for 30 seconds, or until the cheese has melted completely. Serve immediately.
Sandwich Maker Method
Preheat the sandwich maker. Follow directions for sandwich assembly, and cook according to the manufacturer’s instructions.

Get a pan and preheat it on the stove. Get your bread and cheese out. Spray the pan with a cooking spray like Pam. Keep the heat a little high, but not to high and if you want, put just a little butter on each side of the bread. Put the bread on the pan and let it cook on one side of each slice until it's the color you want it. Then, flip them over and put the cheese on a slice. Turn the heat down low so the cheese can get all melty. When it's all done cooking, stick it together and enjoy!

Did You put butter on the bread first? Remember that a low heat is the best way to "cook" cheese sandwiches.

I use butter NOT margarine ( about a teaspoon or so) then I put one piece of bread in the skillet then top it with 2 slices of Kraft or Velveeta cheese slices. then flip it over until both sides are brown & the cheese is melted: cook over medium or medium low heat. Bon Appetit;

get a brown paper bag, butter two pieces of bread, put cheese on the unbuttered sides, place into the bag, butter side out, and run a hot iron over the bag checking it every so often.
But on a more serious side, just don't turn the heat up about med and keep an eye on them, turning them when they are golden brown.

make sure you put a non-stick pan on the burner to preheat it.
i like to use the pan spray instead of butter (that's just me).
spray, or lightly butter both pieces of bread. place them in the pan with cheese on the dry side. lift up bread with spatula th check for doneness. when golden color, put sandwich together and microwave for about 10 seconds or to desired meltedness.

heat the pan well first. then lower the flame. i make mine with butter :P melt a dollop of butter and place the sandwich in the pan. butter the other side of the sandwich (you can do this beforehand so that one side is pre-buttered--saves time). about 2 minutes each side is fine... just take a peek before flipping it... practice makes perfect, so don't give up, k? :D
