Orthodox Judaism. I think it would be really interesting to spend a week learning specifically about the all the rules and regulations. Also, it would be a complete lifestyle change ... where as many other religions wouldn't encompass every aspect of my day. And if I'm gonna switch, I might as well go all the way, right?

EDIT:
However, if you are just referring to attending another religion's worship, and accompanying them for a week in their religious practises, without claiming to believe what I don't believe, then probably I would pick Judaism. It would be very instructive, especially during the Passover week.

I would not swap religions, because I have read enough Bibles to know what the truth is.
