Every person is different, but generally you look for them to exhibit behavior they don't normally. Someone who usually maintains eye contact might suddenly look everywhere but in your eyes, however someone who is poor at maintaining eye contact normally may make a concentrated effort to stare you in the eyes while they lie. A fidgity person may suddenly keep their hands still, while someone who is not usually animated might suddenly use hand gestures and facial expressions. Liars also tend to blink more often. A typical right-handed person tends to look towards his right when remembering something that actually happened and towards their left when they're making something up.
Someone with half a brain and a determination to fool you, however, will know all these tells and will be sure not to do any of them. Someone who can't look you in the eye may have other issues than honesty, like low self esteem or low self confidence, or even Asperger's Syndrome, so that's no guarentee.

Unfortunately there is no definite way to actually to know whether someone is lying. There are a number of "indicators" (no eye contact, unusual gestures, stuttering, high pulse, etc....) that 'may' lead us to conclude someone is lying but even a polygraph is not always right. For the most part, the fact that one is lying is only proven/disproven after 1 of the 3 things have happend:
1)confess
2)enough evidence
3)your already going through the consequences

Depends on a lot of things. People lying to you often make a point of having good eye contact.
Gestures that cover the mouth are an indication. Lipstick on his collar is another sign. Numbers youve not seen before on the phone bill (if you can find it) is another. Hair of a different colour on the passenger seat.....or (go forbid) the back seat.
Different nationalities have very different body languages.....so it really does depend on where you live.

Most of the time people aren't telling the complete truth. Even if they are telling something pretty accurate there is a lot going on in the back ground usually.
The most important thing is being true to yourself and if you feel that someone is not being completly forthcoming...call them on it and ask them if there is anything else they need to tell you.
Studying people can be one way to tell if something is fishy but you have to be really present with yourself and know what's going on for you at the same time because you could just be pushing your own issues on the other person.

Signs of Deception:
Body Language of Lies:
• Physical expression will be limited and stiff, with few arm and hand movements. Hand, arm and leg movement are toward their own body the liar takes up less space.
• A person who is lying to you will avoid making eye contact.
• Hands touching their face, throat & mouth. Touching or scratching the nose or behind their ear. Not likely to touch his chest/heart with an open hand.
Emotional Gestures & Contradiction
• Timing and duration of emotional gestures and emotions are off a normal pace. The display of emotion is delayed, stays longer it would naturally, then stops suddenly.
• Timing is off between emotions gestures/expressions and words. Example: Someone says "I love it!" when receiving a gift, and then smile after making that statement, rather then at the same time the statement is made.
• Gestures/expressions don’t match the verbal statement, such as frowning when saying “I love you.”
• Expressions are limited to mouth movements when someone is faking emotions (like happy, surprised, sad, awe, )instead of the whole face. For example; when someone smiles naturally their whole face is involved: jaw/cheek movement, eyes and forehead push down, etc.
Interactions and Reactions
• A guilty person gets defensive. An innocent person will often go on the offensive.
• A liar is uncomfortable facing his questioner/accuser and may turn his head or body away.
• A liar might unconsciously place objects (book, coffee cup, etc.) between themselves and you.
ahh and when a person is making up something he will look to the left instead of looking to the right when thinking for an answer!

I was in the military and can prove them wrong from the above, you can look someone in the eye and lie, just plain and simple, you also can show signs of lying but not lie, if you know the person you will know them better, but the best way to really find if someone is lying is to see their pupils, if they get larger then they are lying, now that does not mean to turn off a light and trick them but if you look and they get larger then they are lying.

Body language is definately the key., but different people have different give aways. Most often they can't look you in the eyes, sometimes they will play with their hair ao maybe even rub their head. You just have to study the individual. If you are involved with them, your gut feeling is your best guide if you are a woman. Believe in womens intuition.

A couple of ways to tell is if the person doesn't make direct eye contact with you. Also I recall from my psychology days in college that most people have the propensity to look to the left when they lie. Look for crossed arms, covering of the mouth when they speak, facial touches or even standing crooked (body not facing you directly).
