Burnt Sienna because it is an orangish color and Ultramarine blue. They are complements. Together they make a nice neutral grayish. That would give me a warm color, a cool color and depending how thick or thin I made them a gray to almost black. If I wiped the color away to the canvas I could have a near white. Mostly Ultra with a little B.S. I'd have a near black... you get the idea.

Black and white! How else would you get different values in shadows? You're work would look totally 2-dimentional and childish without value!
