What is a simple, yet yummy Easter dinner to prepare? And please no ham reciepes, I'm Jewish, but making an Easter dinner for my friends on Sunday.

Easy Beef Roulade

Ingredients:
1 1/2 lbs beef flank steak
4 teaspoons heavy German mustard or Dijon mustard, will do
6 slices bacon, diced
3/4 cup chopped onions
1/3 cup chopped dill pickles
1/4 cup flour
1 (13 3/4 ounce) can beef broth

Prep:
With meat mallet or rolling pin, flatten meat to about a 10x8 rectangle.
Spread with mustard.
In large skillet on medium high heat, cook bacon and onion til bacon is crisp.
Pour off fat reserving 1/4 cup in skillet.
Spread bacon mix over meat.
Sprinkle pickle on top.
Roll up meat from short end and secure with string or turkey pins.
Place meat roll in skillet over medium high heat in reserved bacon fat and brown on all sides.
Remove to 13x9 baking dish.
Stir flour into fat in skillet and blend until smooth, gradually stirring in beef broth.
Cook and stir over medium heat until thickened.
Pour sauce over beef roll.
Cover and bake at 325 degrees for 1 1/2 hours or until done.
Let stand 10 minutes before slicing.
Skim fat from sauce, strain and serve with meat.

I've baked salmon for Easter. I served it with baked potatoes and asparagus. It made a nice, light meal and different from the traditional Easter ham. The asparagus is at it's prime this time of year. For dessert we had white cake with strawberries. Everyone seemed to enjoy it.

You can buy a turkey breast and roast it.
Stuffing (you can get the kind you make from a box which is quite good)
Mashed potatos and gravy
Asparagus with a butter sauce
Baby carrots with the same sauce

Add a nice Easter cake or a pie for dessert which you can purchase from the store or bake youself.

How about a stuffed beef tenderloin with a cabernet sauce? Have your butcher butterfly your tenderloin so that you can roll it up easily and put it in the oven. You'll also need butchers' twine to tie it with. A great stuffing consists of bread crumbs, gorgonzola cheese, parsley, diced onion sauteed with minced garlic. For the sauce, reduce your wine and add butter and a little mustard. Stir and simmer until thickened. Add thyme to the mixture for added flavor. When ready to serve, slice the tenderloin and spoon some sauce over each piece. Serve this meal with garlic mashed potatoes and fresh green beans with lemon butter. For dessert, consider something like chocolat creme brulee or chocolate silk pie.
