Watching the chick develope the inner skin of the egg gradually draws back so as to increase the amount of air in the shell. The chick then has air to breathe in the time immediatley before the hatch. Developement can be checked with a gradual decrease in weight as the hatch gets nearer.

I raise chickens and no the eggs weight does not change. I have baby chicks not and they do not weight more than an egg when i got them. A word of advice though... When using eggs that can possibly be fertilized i have a polocy of always cracking the egg open into a small dish or cup before adding it to my recipe or the pan. This way you know if the egg is fertilized, half grown or just not good at all before ruining the rest of your food.

By weighing the egg at set time, and monitoring egg weight periodically through incubation, you can ensure the best humidity profile for optimal hatch. Water loss can be calculated several ways. One method is to calculate the percent water loss relative to the egg's set weight for a given period of time.

No. According to the Mississippi State University Extension service, an egg's weight must actually DECREASE during incubation for a good hatch.

Other way around. It evaporates some moisture while getting ready to hatch.A chick can actually breath through the shell, that's what that little air chamber is for you find when you cook an egg. But that's all that passes through the egg water and air.
