I recently found out I love asparagus. I blanch them in salted water and sautee them w/ garlic, olive oil, salt pepper, red pepper flakes. Theyre really good like that but I'm looking for something different and tasty! I hate it when theyre cooked stringy

ABC (Asparagus, broccoli, cauliflower)

The three that are named in equal portions (if you love asparagus, use more) Covered with cream of chicken (or mushroom) soup.......until it is fully moist.

Top with cheese

crunched up potato chips....or crackers....or bread crumbs to make a nice topping (put slivers of butter or margarine on top of the crumbs so they melt in the oven)

bake 350 for 1/2 hour

My whole family has been eating this recipe forever. and we all grew up liking the 3 that most kids did notl like

Asparagus Au Gratin

Ingredients:
1/2 cup water
1 1/2 pound asparagus spears -- trimmed
1/2 cup Swiss cheese -- shredded
1/4 cup dry bread crumbs
2 tablespoons butter -- melted
1/2 teaspoon dry mustard
1/8 teaspoon pepper


Directions:

Preheat oven to 400F. Add the water to a large skillet and bring to a boil. Add the asparagus and simmer until crisp tender, about 2 minutes. Drain and place in a baking dish.

Mix together remaining ingredients and sprinkle over asparagus. Bake for 8-10 minutes, or until cheese mixture is lightly browned.

A family favorite, I've made it without the mustard and it is still yummy.

Asparagus Asiago

2 lbs asparagus spears, woody stems removed
2 Tbsp. olive oil
1/4 tsp each of Italian seasoning, salt, and pepper
1 oz. Asiago cheese

Heat oven to 400 degrees. Put asparagus on a rimmed baking sheet. Drizzle with olive oil and spices. Toss to coat evenly. spread in even layer. Roast for 15 min or until tips are slightly browned and just fork tender. With a vegetable peeler, shave cheese onto the asparagus. Toss gently.

In taste tests by cooksillustrated.com they found that broiled asparagus tastes best due to the carmel-ization of the sugar in it. Put rack 6 inches from the broiler, put asparagus in a flat pan, drizzle with olive oil, mix, add salt and pepper, mix, place under broiler for 4-8 minutes, shaking pan regularly. They are really easy and tasty. You can add sauce if you like. Good luck.

That's exactly how I cook my asparaugs, too!!

Here's a different recipe - Delish!

Stir-fried Asparagus with Shiitake Mushrooms:

1 lb. asparagus
6 oz. shiitake mushrooms, fresh
1 tbsp. vegetable oil
1 tbsp. sesame oil
2 tsp. chopped garlic
4 fl. oz oyster sauce
crushed red chiles, to taste

1. Wash asparagus, trim ends and slice on the bias into 1- to 2-inch pieces.

2. Wash mushrooms, trim off stems and slice caps into 1/2-inch thick slices.

3. Heat oils in a wok or sauté pan.

4. Add garlic and stir-fry for a few seconds.

5. Add mushrooms and asparagus and stir-fry for 1 minute.

6. Add oyster sauce and crushed chiles and continue to stir-fry until the asparagus is nearly tender, approximately 3 minutes.

Do the blanching. Then saute in butter or wine. leave them a little al dente and i like to make a cheese sauce. You could use velveeta, or some cheddar, put milk in the cheese sauce. Spice it up however u like. Play around with it. But cheese sauce is really good with asparagus.

Fresh Asparagus Soup

INGREDIENTS:
1 pound fresh asparagus
3/4 cup chopped onion
1/2 cup vegetable broth
1 tablespoon butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 pinch ground black pepper
1 1/4 cups vegetable broth
1 cup soy milk
1/2 cup yogurt
1 teaspoon lemon juice
1/4 cup grated Parmesan cheese

DIRECTIONS:
Place asparagus and onion in a saucepan with 1/2 cup vegetable broth. Bring the broth to a boil, reduce heat and let simmer until the vegetables are tender.
Reserve a few asparagus tips for garnish. Place remaining vegetable mixture in an electric blender and puree until smooth.
Melt butter in the pan that was used for simmering the asparagus and onions. Stir while sprinkling flour, salt, and pepper into the butter. Do not let the flour brown. Allow the mixture to cook only 2 minutes. Stir in remaining 1 1/4 cups vegetable broth and increase the heat. Continue stirring until the mixture comes to a boil.
Stir the vegetable puree and milk into the saucepan. Whisk yogurt into the mixture, followed by lemon juice. Stir until heated through, then ladle into bowls. Garnish with reserved asparagus tips. Sprinkle with Parmesan cheese if desired.

1/4 cup butter
3 tablespoons parmesan cheese, Grated
1 large egg, Hard-cooked

DIRECTIONS:
Wash asparagus spears and trim off tough ends.
Place asparagus in boiling salted water and cook until tender, 7 to 10 minutes.
Drain off liquid.
In a small saucepan, melt the butter, cook over low heat until lightly browned.
Sprinkle freshly grated cheese over butter and mix.
Spoon over asparagus.
Garnish with sliced hard boiled egg

Toss with a little olive oil, sprinkle with garlic if you wish, and grill the spears. Yum yum yum!

I bought one of those indoor grilling machines and find that my very favorite is grilled asparagus. Broccoli is good grilled on those, too. I hardly ever use mine for meat.

I roast them in olive oil lemon juice a little sal and fresh ground pepper- they end up carmelized with a smokey flavor
or steam them and top with hollandaise sauce

Man, asparagus is so good. you can serve them with hollandaise, with beurre blanc, chop them up into a nice salad, put them on a pizza with some feta, onion, calamata olives, and bell peppers, use them in pastas, you can do tempura, so much you can do with asparagus. a traditional french way of serving them is cold, with a red wine vinaigrette and chopped hard-boiled egg on top. so damn good
