Something with limited ingredients preferably, like potatoes and hopefully something I can cook in a dutch oven. Thanks!

Freshness is key, should snap apart without stringy woody fibers. My preference is sliced and placed in covered skillet with sufficient amount of butter on med/low heat until tender. No need to mix with anything else! Spring vegetables are the best, near time for asparagus where I am!

Roast Parsnips are easy.
After cooking parsnips in Dutch Oven grill until dark,in lid.

Boil, then mash or cube and curry.

Boil and mash together with carrots.

Parsnips have their own peculiar flavor --- not like some people say they taste like carrots. That's like saying apples taste like pears. Parsnips cook relatively fast and add sweetness to your dish. Want a different twist on mashed potatoes just cook 50 -- 50 of peeled parsnips and potatoes drain and make mashed.They work in many stews,vegetables bakes etc. I love to use them when ever I can. Dunno about a dutch oven, but I combine peeled parsnips with peeled potatoes and boil them together to make mashed potatoes. It adds a sweet taste.
