Best Baked Salmon

This is one of the easiest ways of cooking fresh salmon. Baking in aluminum foil is particularly recommended for fresh salmon to preserve its delicate flavor. It makes a wonderful party dish, hot or cold.

1 (3- to 4-pound) salmon, dressed
Salt and coarsely ground pepper
6 bacon slices
1 lemon, thinly sliced
1 onion, thinly sliced
1 large tomato, thinly sliced

Preheat oven to 350° F. Wash salmon and pat dry; place onto aluminum foil. Salt and pepper the cavity of the salmon. Layer bacon slices, lemon slices, onion slices, and tomato slices in the cavity of salmon; wrap in aluminum foil.

Bake 1 to 1 1/2 hours until a meat thermometer registers an internal temperature registers 140 degrees F. or until fish is slightly opaque in thickest part (cut to test). NOTE: During this time the meat continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the oven) and the juices redistribute.

Remove from oven, remove aluminum foil, and transfer onto a serving platter to serve.

Grilled Candied Salmon

This delightful and simple salmon recipe creates a candied salmon that melts in your mouth. Even the children love this salmon!

3/4 cup genuine maple syrup
1/4 cup soy sauce
4 (6-ounce) salmon fillets or 1 large salmon fillet
1/4 cup coarsely ground black pepper
Coarse kosher salt
Olive oil

In a small bowl, combine the maple syrup and soy sauce. Pour the marinade into a large plastic re-sealable bag' add salmon fillets. Press out the air and seal the bag tightly, then turn the bag several times to distribute the marinade around the salmon. Refrigerate a minimum of 4 hours and as long as 24 hours, turning salmon frequently.

Preheat grill to high temperature. Remove salmon steak from marinade and generously spread olive oil on both sides of each fillet. Place salmon onto a large piece of aluminum foil. Pat top side of salmon only with coarse black pepper. Sprinkle coarse salt over the top.

Place salmon with aluminum foil onto hot grill, cover barbecue with lid, and open any vents. Cook, pepper side up, approximately 8 to 12 minutes or until a meat thermometer registers an internal temperature of 140 degrees F. (salmon will be slightly opaque in thickest part). NOTE: During this time the salmon continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the grill) and the juices redistribute. Carefully remove salmon from grill and transfer onto individual serving plates or platter. Serve immediately.

Approximately cooking times for salmon:

1/4 to 1/3-inch - 3 to 4 minutes
1/2 to 3/4-inch - 4 to 6 minutes
1 to 1 1/2-inch - 8 to 12 minutes

Makes 4 servings.

Smoked Salmon & Goat Cheese Crostini

8 ounces goat cheese
1 1/2 tablespoons chopped fresh tarragon leaves
1 tablespoon fennel seeds, finely crushed
2 teaspoons grated lemon zest
1/2 teaspoon coarsely ground black pepper
2 1/2 tablespoons olive oil
30 thin slices French-bread baguette
12 ounces thinly sliced smoked salmon
Lemon peel strips (for garnish)
Tarragon sprigs (for garnish)

Preheat oven to 350 degrees F. In a small bowl, combine goat cheese, tarragon, fennel, lemon zest, and pepper; set aside.

Brush oil over both sides of bread. Arrange bread in single layer on large baking sheet. Bake approximately 5 minutes per side or until bread is just crisp.

NOTE: Cheese mixture and toasts can be made 2 days ahead. Cover cheese mixture and chill. Cool toasts; store airtight at room temperature.

Spread cheese mixture over toasts. Top with salmon, trimming to fit. Garnish with lemon peel strips and tarragon sprigs. Arrange on platter and serve.

Makes 30 crostini.

Ingredients:
1 teaspoon McCormick® Ground Ginger
1 teaspoon McCormick® Garlic Powder
1/3 cup soy sauce
1/3 cup orange juice
1/4 cup honey
1 green onion, chopped
1 1/2 pounds salmon fillet

Directions:
1. In a large self-closing plastic bag, combine first six ingredients; mix well. Place salmon in bag and seal tightly. Turn bag gently to distribute marinade.

2. Refrigerate 15 minutes or up to 30 minutes for stronger flavor. Turn bag occasionally.

Then broil or grill until done.

My favorite salmon recipe comes from a family member who is a fabulous cook - it is so easy and yummy.
Purchase a lemon and lots of fresh herbs: Dill, parsley. Chop the herbs coarsely - big sections.
You just take your salmon fillet, place it on a large sheet of foil, then put the fresh herbs on top. There should be a very thick layer of herbs, which will of course cook down. (If you want you can put some slices of lemon on top). Then drizzle a little olive oil on top, crack some pepper over it, a little salt, wrap it up and either barbeque it or bake it. (How long it takes will depend on the thickness - but you can look it up online once you get your salmon). Serve it with cut lemon wedges. Easy, delicious - enjoy!

Salmon
1 bell pepper
1 sliced onion
salt & pepper
1 touch of dry white wine
dill, or rosemary, or any herbs you like really

In an aluminium foil, wrap the salmon topped with all the ingredients. Put in the oven at 380° for 20 minutes, then open the top of the aluminum for the salmon to grill a little.

easiest way is butter, salt and pepper in a pan. Cook with skin side up first on fairly high heat. Get the color you want then finish with skin side down until proper doneness is achieved. Med rare will allow it to be moist and flavourful. Then try either lemon/dill over the salmon or my fav which is heat up some maple syrup and melt butter into that. It should be creamy and a bit thick. Drizzle over the salmon and enjoy.

Salmon w/ a lemon butter caper sauce.
Grill or pan sear the salmon w/ a little olive oil, salt and pepper over medium heat.

In another small skillet melt 2 tbs. butter, squeeze of fresh lemon and zest, a tbsp of olive oil, some capers and salt and pepper. You can add fresh parsley if you like as well. When salmon is done pour sauce over salmon.

I guarantee you'll love it. It's my favorite salmon recipe and its quick and easy!!!

I made salmon two days ago. If you need any easy easy recipe, then just egg, bread, and fry in a frying pan with PAM sprayed in the pan, and cook medium heat. Or if u want to get a bit fancy, get a fish griddle, and barbeque it. Again, spray PAM, first. But that's the real easy recipe. There's more, but you wanted easy. YUM!!!!!!
