I tried using some dry rub on a steak rubbed down with a little oil and I seared it in a pan, but it ended up having a black burnt shell instead of a yummy brown crust. Are dry rubs only for grill?

Your heat probably was on too high. Dry rubs are great anyway you cook, roast, spit, grill etc. That particular rub must of had some sugar in it also.

Don't give up ~ next time it will be fine.

You basically just discovered how to blacken your steak.

When using a dry rub on a steak, that you intend to cook in a pan, increase the amount of fat in the pan so that the bottom of the pan is completely covered. Sear the meat over a medium high heat and finish in the oven to your temperature preference.

Any dry spices or herbs that get "fried" in a pan will burn. For pan frying, I use a marinade rather than a rub. Rubs are basically made for grilling where the surface will not be touching a direct heat source.

sounds like your pan was too hot...rubs work on seared meats just important to have enough oil in the pan to sear the steak but not burn it. a little oil goes a long way!

yes but if wut ur have to eat a day before add your dry rubs or (fixing) and let them sit for a few hrs or a day u will love it
