Chicken Paprikas (Hungarian dish) fantastic with rice or pasta.

Chicken Paprikas

1 chicken 1 oz margarine
1 onion 1 tablespoon paprika
Cornstarch sour cream
Maggi salt
tabasco sauce


Cut chicken into big pieces. Salt. Then fry in margarine with finely cut onion until both onions and chicken turn light brown. Add some water and 1 teaspoon of paprika mix well and let simmer for 10 minutes.

Remove all the pieces of chicken into a bowl. Now add sour cream and 2 teaspoons of cornstarch to the sauce. Stir until smooth then let come to a boil. Add 5 drops of Tabasco sauce and add salt and Maggi to your taste. If necessary add more paprika at this point.

Strain the sauce and pour over the chicken pieces. Place into oven and bake 20 to 30 minutes at 300 degrees. Can be served with rice, spaetzle or noodles and a salad.

This recipe is used often in my kitchen. It is very tasty, easy and satisfying. Here goes: 4-6 chicken breasts depending on how hungry you are, salt, pepper, fresh basil, goat cheese flavored with garlic and herbs (Mediterranean).
Heat oven to 350. Wash and pat dry breasts. Slide fingers under skin off breasts but do not remove completely. Insert slices of goat cheese and a couple leaves of basil. Do this to all breasts. Salt and pepper and drizzle with a bit of olive oil. Cook until done. These are very good served with roasted new potatoes and grilled artichokes. Enjoy!!

1 lb boneless skinless chicken breasts, cut into 1/ 2-inch pieces
1/4 cup chicken broth or low sodium chicken broth (14-1/ 2 oz can)
1/2 cup spaghetti sauce (14 oz jar)
1/2 teaspoon dried basil
1/2 teaspoon oregano leaves
3 cups rotini pasta (8oz) or penne rigate, uncooked (8oz)
3/4 cup parmesan cheese, grated

1. In 10 inch skillet over medium-high heat, melt butter; add chicken.
2. Cook, stirring occasionally, until no longer pink, about 3 minutes.
3. Add chicken broth, spaghetti sauce and seasonings; heat to boiling.
4. Add uncooked pasta, stirring to coat with liquid.
5. Cover; reduce heat. Simmer 15 minutes, stirring every 2 minutes or until most liquid is absorbed.
6. Remove from heat; stir in Parmesan cheese. 5 servings (1 cup each)
