I am new to asian type cooking, but would love to make laksa and other light asian soups and dishes. Any recipes or tips would be greatly appreciated.

Chicken Laksa:

30 min 15 min prep
6 servings

200 g thin dried noodles
2 red chilies
4 garlic cloves
5 cm peeled and roughly chopped green ginger
1 teaspoon ground coriander
1/2 cup coriander roots, stems and leaves
50 ml sesame oil
3 skinless chicken breasts
1 liter light coconut milk
3 cups chicken stock
50 ml fish sauce
1 lime, juice of
to serve
1/2 cup mint leaves
3 finely sliced green onions
1 cup fresh bean sprouts
lime wedges

1. Soak the noodles in boiling water for 5 minutes.
2. Drain and set aside.
3. Put chillies, garlic, ginger, coriander seeds, fresh coriander and oil into food processor and process to a coarse paste.
4. Slice the chicken breasts diagonally.
5. In a large saucepan over medium heat add the paste and fry for 1 minute, stir well.
6. Add coconut milk and stock.
7. Bring to boil, simmer gently for 10 minutes.
8. Add fish sauce and chicken and cook for 5 minutes.
9. Add lime juice.
10. Divide noodles between bowls and ladle soup over them.
11. Sprinkly with mint leaves, green onions,bean shoots and lime wedges.

Shrimp & Mushroom Laksa substances: 2 tablespoons peanut or canola oil 2 scallions (spring onions)—white and eco-friendly elements sliced and seperated 2 cloves garlic—minced a million teaspoon turmeric 2 teaspoons pink curry paste (or 3 teaspoons for a hotter laksa) 2 ½ cups chicken inventory a million ½ cups coconut milk a million teaspoon brown sugar ½ teaspoon salt 2 tablespoons fish sauce 10 button mushrooms—wiped clean and quartered 20 tremendous raw shrimp—peeled and deveined 3 ½ oz (100g) dried rice stick noodles a million tablespoon lemon juice 2 tablespoons cilantro (corinander leaves)—left total technique: warmth the oil in a wide saucepan over a medium warmth. upload the white area of the scallion and saute a million minute. upload the garlic, turmeric, curry paste and cook a million minute, stirring. upload inventory, coconut milk, sugar, salt and fish sauce and produce to the boil. shrink warmth and simmer for 5 minutes, uncovered. at the same time as the soup simmers, soak the noodles in boiling water for 10 minutes. upload mushrooms to the soup, go back to boil and cook 2 minutes. upload shrimp and cook 2 minutes. I have never done it. Is actually new to me. Thanks for the idea!. I found a few things, but these really looked good to me.
