If you're referring to Yahoo! Chat rooms then unfortunately you can't. The Mac version of Yahoo! Messenger currently doesn't support chat rooms. This will hopefully change in future.

The iChat app of OSX is a chat app for AIM, Jabber, Google Talk, and Bonjour.

There is an MSN for Mac which you can download off of Microsoft website.

Yahoo Messenger has their own client for Mac on their website.

IRC can also be for mac. Ircle is a common client.

AIM actually has a client, but it is 4.7 and it keeps crashing, so using another AIM client is wise. I use Fire.

Macs are fully compatiable with chat. A lot of the clients that are for windows are also for mac, and the setup is pretty much the same. The majority of them will either install or have you drag the icon to the applications folder.

For iChat, that should appear in your dock. When you first run it, there should be a popup to help you setup. If not, then in the Finder bar, click iChat, then Preferences and setup there.

I do not think there is a chat which is not compatible with Mac.

A lot of chat clients' websites will detect if you have a Mac, then instead of the download for Windows, it will be download for Mac. If it's not there, then it can still be found using a search engine (ex. "AIM Mac" or "Skype mac")
