Sweet Potato Pie:

1¼ hours 15 min prep
6-8 servings

1/3 cup butter or margarine, softened
1/2 cup sugar
2 eggs, lightly beaten
3/4 cup evaporated milk
2 cups mashed sweet potatoes
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 unbaked 9 inch pie shell

1. In a mixing bowl, cream butter and sugar.
2. Add eggs; mix well.
3. Add milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt; mix well.
4. Pour into pie shell.
5. Bake at 425 degrees for 15 minutes.
6. Reduce heat to 350 degrees; bake 35-40 minutes longer or until pie tests done.
7. Cool; Store in refrigerator.

Here is the recipe that I use...I like this recipe because it uses both sweetened condensed milk & pecans.

Sweet Potato Pie IV

"This is a sweet potato pie with optional pecan topping. It uses sweetened condensed milk, as opposed to the more commonly used evaporated milk. Serve with ice cream or whipped cream. Yams may be used instead of sweet potatoes."

Original recipe yield:
1 - 9 inch pie

PREP TIME 5 Min
COOK TIME 10 Min
READY IN 15 Min

INGREDIENTS
1 pound sweet potatoes
1/4 cup butter
1 (14 ounce) can sweetened condensed milk
1 teaspoon ground cinnamon
1 teaspoon orange zest
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 recipe pastry for a 9 inch single crust pie
1 egg
2 tablespoons dark corn syrup
2 tablespoons brown sugar, packed
1 tablespoon butter, melted
1/2 teaspoon maple flavored extract
1 cup chopped pecans

DIRECTIONS
Boil sweet potato whole in skin for 40 to 50 minutes until done. Run cold water over the sweet potato, and remove the skin. Break apart in a large bowl.
Melt 1/4 cup butter or margarine, and pour it in the bowl with the sweet potatoes. Beat with an electric mixer until smooth. Blend in sweetened condensed milk, cinnamon, orange rind, vanilla, nutmeg, salt, and 1 egg. Pour into the unbaked crust.
Bake at 425 degrees F (220 degrees C) for 20 minutes. Remove the pie from the oven and reduce the temperature to 350 degrees F (175 degrees C).
While the pie is baking, prepare the topping. Mix together 1 egg, corn syrup, brown sugar, 1 tablespoon melted butter, maple flavoring, and pecans. Mix thoroughly. Sprinkle over pie.
Bake for another 25 minutes until set.

I dont know what your taste buds are like, but this one is good! is sweet potato pie, but has an extra layer on top of "Haupia", is like a coconut flan, u can use "Tembleque" the puerto Rican version of the pudding instead. Goya sells them in lil boxes, its instant too.

Heavenly Sweet Potato Pie
So good, it doesn't need a crust! Add one if you desire. It smelled so good thanks to the maple syrup and nutmeg. Add cinnamon if you wish, which I am sure will make it even nummier! Cook time only accounts for baking. You can "bake" the potatoes by nuking them for 10 mins.

2 large sweet potatoes, cooked and mashed
1/2 cup skim milk
1/2 cup sugar-free maple syrup
1 teaspoon vanilla
1/4 teaspoon nutmeg
2 egg substitute

Boil sweet potatoes until soft.
Mash potatoes in a large-mixing bowl.
Combine mashed sweet potatoes with eggs, syrup, vanilla, milk and nutmeg.
Mix well.
Spray 9-inch pie pan with non-fat cooking spray.
Pour mixture into the prepared pan and bake at 350 degrees for 1 hour or until knife comes out clean.

1 cup packed baked sweet potatoes (peeled)
3 eggs, slightly beaten
2 (3 ounce) packages cream cheese, softened
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1/4 cup butter, melted and cooled
1 unbaked 9 inch deep dish pie shell

Run sweet potatoes through a sieve or mash with fork.
Add all the other ingredients to sweet potatoes and mix with mixer.
Pour into an unbaked, deep dish pie shell.
Bake at 350 degrees for 20-30 minutes or until set.

Sweet Potato-Pecan Pie
12 servings 1¼ hours 1¼ hours prep

1 pie crust, unbaked (9 inch)
Filling:
1 large egg
1 1/2 cups fresh sweet potatoes, mashed cooked
1/4 cup sugar
2 tablespoons unsalted butter or margarine, softened 1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon cinnamon, ground
1/8 teaspoon allspice, ground
1/8 teaspoon nutmeg, ground
Pecan Topping
2 large eggs
1/2 cup sugar
1/2 cup dark corn syrup
2 tablespoons unsalted butter or margarine, melted
1 teaspoon vanilla extract
1 dash cinnamon, ground
1 cup pecan halves
1/2 cup heavy cream, whipped stiff Prepare pie shell;set aside

Make sweet potato filling: In med.
bowl, with electric mixer, beat 1 egg until frothy.
Add all the remaining filling ingredients; beat at med.
speed until the mixture is smooth, about 2 min.
Make pecan topping: In med.
bowl, with mixer, beat eggs until frothy.
Add sugar, corn syrup, melted butter, vanilla and cinnamon.
Beat at low speed just until mixture is well blended, about 1 min.
Stir in pecans.
Oven to 350 degrees.
To assemble: turn sweet potato filling unbaked pie shell, spreading evenly.
Pour pecan topping over top.
Bake 60-70 min., until set and knife inserted in center comes out clean.
Remove pie to rack to cool.
Just before serving, decorate with whipped cream.

i don't but my aunt makes a killer one. could get the recipe from her and send it to you one day. I'm serious, she bakes them every year Thanksgiving and always bring me two of them
