My friend loved fried potatoes with every meal. When hunting, he'd peel and cut up his potatoes then carry then in a large thermos of cold water until ready to cook them. They never went black.

No lemon juice needed...
Just peel, cut & soak in water while refrigerated. (I don't cover them either) Drain off the water (it will be VERY starchy/cloudy) and refill with water when you are ready to cook them.
I do these the night before a big meal like Thanksgiving and have NEVER had a problem.

Peel and slice and store them in a bowl of water. Can be cold or at room temp. The water will prevent themfrom oxidizing due to exposure to the air (ie -turn black)- but since they will absorb a little water, you may have to cook them a few minutes longer to ensure they "dry".

I love taters! Fried, stewed, barbecued! I love taters!!!
Simple and easy, put them in water, cool is fine out of the tap, in a bowl. You need to add a little acid, so a little lemon juice or vinegar, cover. Put in the fridge till you need them!
I love taters.
Did I tell you how much I like taters?
Can I come for supper? Cause I like taters too!

Use anti-oxidants such as lemon juice, which are high in citric acid.
Remove the air from your potatoes. This is why vacuum-packed canned foods stay fresh so long.
Remove water from your potatoes (called "dehydration").

Soaking in cold water is good as everyone says. My mother-in-law puts a little salt in it--to get the starch out.
