My Aunt sent me some fresh Kielbassi for Easter and I'm not sure how to cook it right. If you have any idea's for how to cook it or good recipes I love to hear them. Thank's much. Deb

I cut up Kielbasa and add it to red beans and rice. You can buy the box mix for the read beans and rice or make your own. Either way, if you like something that's slightly spicy I recommend trying it! The recipe at the link calls for turkey kielbasa, but I use pork or beef. I also omit the tomatoes completely.

INGREDIENTS
2 cups water
1 cup uncooked rice
1 (16 ounce) package kielbasa, cut into 1/4 inch slices
1 onion, chopped
1 green bell pepper, chopped
1 clove chopped garlic
2 (15 ounce) cans canned kidney beans, drained
1 (16 ounce) can whole peeled tomatoes, chopped
1/2 teaspoon dried oregano
salt to taste
1/2 teaspoon pepper
DIRECTIONS
In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
In a large skillet over low heat, cook sausage for 5 minutes. Stir in onion, green pepper and garlic; saute until tender. Pour in beans and tomatoes with juice. Season with oregano, salt and pepper. Simmer uncovered for 20 minutes. Serve over rice.

One pound kielbasa, sliced into 1/2-inch coins
One can (12 ounces) Iron City Beer
One jar Heinz chili sauce
One small can (8 ounces) crushed pineapple, drained
3/4 cup brown sugar
PREPARATION:
Kielbasa: Pour beer into a large skillet. Bring to a simmer and add kielbasa pieces. Cook sausage for three minutes per side. Drain. Serve warm with dipping sauce (recipe follows).
Dipping Sauce: Mix the chili sauce, crushed pineapple and brown sugar in a small saucepan.

Bring to a boil over medium heat. Reduce heat to low and simmer for 5 minutes. Serve warm with kielbasa slices

Kielbasa with onion and green pepper

2 lb. polish kielbasa
4 green peppers (red and green)
4 lg. onions
Garlic salt
Oregano
1 hot pepper, chopped

Fry kielbasa very slowly in bacon grease about 20 minutes on low heat; just to brown good and slow. Remove sausage form pan and add to the drippings pepper, onion and spices. Saute until vegetables are tender. Add sausage back to vegetables and simmer a while. Serve on hoagie bun with heaping portion of peppers and onions.

SAUERKRAUT AND POLISH KIELBASA

2 qt. jars prepared sauerkraut (Polish style)
2 pkgs. Kielbasa sausage
2 tbsp. garlic salt
1/2 c. brown sugar
1/2 c. onion
1/2 dried onion

Cut sausage into coin shaped pieces. Mix cut sausage with sauerkraut. Add sausage drippings or bacon drippings to mix. Put in 2 quart casserole at 350 degrees. Cover first 45 minutes; uncover last 45 minutes

You can also grill like like a hot dog. I do it all the time and it is so good. Trust me. It is easier then some of the other recipes that people sent. I am sure they are good but the grilled kielbasi is too.

--------Here is one recipe that I have made & we enjoyed it......

Kielbasa and Potato Bake

1 can condensed cream of mushroom soup (10.75 ounce)
2 cups milk
1 tablespoon minced garlic
1 teaspoon salt
1/2 teaspoon ground black pepper
1 pound kielbasa sausage sliced thin
4 large russet potatoes peeled and cubed

Preheat oven to 375 degrees.

In a large mixing bowl, mix together soup, milk, garlic, salt, and pepper. Stir in potatoes and kielbasa. Spoon into a 7x11 inch casserole dish.

Place casserole on a baking sheet, and bake in the preheated oven for 90 minutes, or until potatoes are tender.

Easy Cheesy Kielbasa & Noodle Casserole

6 servings

2 tablespoons butter
6 green onions, chopped
1/2 cup fresh mushrooms, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon horseradish
1/8 cup fresh parsley, chopped
2 cups swiss cheese, shredded (8 oz)
8 ounces wide egg noodles, cooked and drained
1/2 cup milk
1 lb kielbasa or smoked sausage, cut into bite size pieces
1 lb fresh broccoli, cleaned, cut into spears
3 large carrots, cleaned, peeled, cut into 1 1/2 inch pieces
6 medium red potatoes, quartered

In frying pan, melt 1 tbsp butter and sauté onions and and mushrooms until tender.
Add salt, pepper, horseradish and parsley.
In medium bowl, mix together onions, mushrooms, 1 1/2 cups cheese, noodles, and milk.
Spoon into a buttered 13x9" baking dish.
Sauté kielbasa in remaining tablespoon of butter for about 5 minutes.
Arrange kielbasa in center of noodles in baking pan.
Cook vegetables until just tender and arrange around the kielbasa.
Sprinkle remaining cheese over vegetables.
Bake at 375° F for 15 minutes or until cheese is melted and casserole is heated through.

Saute in a covered pan with some water until it's cooked, then in some oil to brown it a little.

My goodness these fancy recipes people are sending you.
Just boil it like you would do hot dogs. And serve it with mashed potatoes and your favorite veggies.
You'll love it plain and simple.
I've been eating it this way for over 40 years.

Sweet Kielbasa

INGREDIENTS
2 (16 ounce) packages fully cooked kielbasa or Polish sausage, cut into 1/4-inch slices
1 (16 ounce) can jellied cranberry sauce
1 (13.25 ounce) can pineapple chunks in heavy syrup
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Place the sliced kielbasa into a 9x13 inch baking dish. In a medium bowl, stir together the cranberry sauce and pineapple chunks. Pour over the kielbasa and stir to coat.
Bake for about 1 hour in the preheated oven or until sauce thickens.







Kielbasa Skillet Stew

INGREDIENTS
5 bacon strips
1 medium onion, chopped
1 pound smoked kielbasa sausage, thinly sliced
2 (15.5 ounce) cans great Northern beans, undrained
2 (8 ounce) cans tomato sauce
1 (4 ounce) can chopped green chilies
2 medium carrots, thinly sliced
1/2 medium green pepper, chopped
1/2 teaspoon Italian seasoning
1/2 teaspoon dried thyme
1/8 teaspoon pepper
DIRECTIONS
In a 12-in. skillet, cook bacon until crisp; remove to paper towel to
drain. In drippings, cook onion and sausage until the onion is tender; drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon and sprinkle on top.







Kielbasa Bean Soup

INGREDIENTS
4 1/2 cups water
2 (14.5 ounce) cans diced tomatoes, undrained
1 (16 ounce) can kidney beans, rinsed and drained
1 (15.5 ounce) can great northern beans, rinsed and drained
1 (15 ounce) can garbanzo beans or chickpeas, rinsed and drained
2 medium green peppers, chopped
2 medium onions, chopped
2 celery ribs, chopped
1 medium zucchini, sliced
2 teaspoons chicken bouillon granules
2 garlic cloves, minced
2 1/2 teaspoons chili powder
2 teaspoons dried basil
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 bay leaves
3/4 pound fully cooked kielbasa or Polish sausage, halved lengthwise and sliced
DIRECTIONS
In a soup kettle or Dutch oven, combine all ingredients except the sausage. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Add sausage and heat through. Discard bay leaves.







Cheesey Kielbasa Bake

INGREDIENTS
12 ounces uncooked elbow macaroni
2 pounds kielbasa (Polish) sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onion, chopped
2 medium zucchini, quartered lengthwise and sliced
2 medium carrots, grated
1 clove garlic, minced
1 (26 ounce) jar spaghetti sauce
1 (14.5 ounce) can stewed tomatoes
1 egg, lightly beaten
1 (15 ounce) container ricotta cheese
2 cups shredded Cheddar cheese
2 cups shredded mozzarella cheese
2 green onions, chopped
DIRECTIONS
Cook macaroni according to package directions; drain and set aside. In a large skillet, brown the sausage in oil over medium heat. Add the onions, zucchini, carrots and garlic; cook and stir for 5-6 minutes or until crisp-tender. Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes.
In each of two greased 13-in. x 9-in. x 2-in. baking dishes, layer a fourth of the macaroni and meat sauce. Combine the egg and ricotta cheese; spoon a fourth over sauce. Sprinkle with a fourth of the cheddar and mozzarella cheeses.
Cover and bake at 350 degrees F for 15 minutes. Uncover; bake 15 minutes longer or until cheese is melted. Serve one casserole. Cool second casserole; cover and freeze for up to 2 months.

it's a cured meat product so doesn't actually need cooking. i remember last time my wife and i visited her family in poland we ate it cold, sliced, with other meats, cheeses, pickles and bread. and of course lots of cold vodka!!
