how would one normally use a verb like asustar or encantar. Can these onlly be used in the third person (el,ellos) I only need to lnow for present tense

no! you can use them with any person..."asustar" can be used with an object (asustar a alguien: Me divierte cuando asusto a mi hermano/Sin querer, asustamos a mi mamá) or as reflexive verbs (asustarse: Me asusto con facilidad /¿Te asustaste?)...I would use "encantar" in sentences like :Me encanta ir a la playa / A mi papá le encanta el cine

If you want to use the verb asustar, you should use it like this:
Present tense
yo asusto
tu asustas
el/ella asusta
ellos/ellas asustan
ustedes asustan
nosotros asustamos
vosotros asustais
Past tense
yo asusté
tu asustaste
el/ella asustaron
ellos/ellas asustaron
ustedes asustaron
nosotros asustamos
vosotros asusteis
