Caramelized Apple Rings
INGREDIENTS
1 large tart apple, cored and sliced 1/2-inch thick
2 tablespoons butter or margarine
1/4 cup packed brown sugar
DIRECTIONS
In a skillet, cook apples in butter until tender. Sprinkle with brown sugar. Cook until apples are golden brown and caramelized, about 5 minutes.

I have never used brown sugar to carmelize my apple slices. I just simply melt butter and granulated sugar together, add my sliced apples and let cook, slowly until they are done and soft, golden and caramel-ly. Works for me every time! Add some cinnamon before they are all the way done if you desire. Yumm....

3 green cooking apples, peeled and sliced
4 T. butter
1 1/4 C. brown sugar
1/4 t. nutmeg
1 t. lemon juice
1/2 t. vanilla
Saute the apples until golden brown. Add the brown sugar and nutmeg; stir until it liquefies. Add the lemon juice and vanilla

INGREDIENTS
6 individually wrapped caramels, unwrapped and chopped
2 tablespoons light corn syrup
2 apples - peeled, cored and diced
DIRECTIONS
In a medium microwave safe bowl, place the caramels and light corn syrup. Microwave on high heat approximately 30 seconds, until melted.
Place apples in the bowl, and toss until coated with the caramel and light corn syrup mixture. Allow to cool before serving.
