Down South...here we use alot of mesquite and oak chips...Hickory, cherry wood and peach wood chips are used around North and East USA, I'm sure there are many more types...YUM!

I use Hickory myself , I guess it would depend on what smoke flavor you liked best.

When I lived in Texas I would do the mesquite because the trees grow wild there. Plenty to use for smoking meats.
