Fluffy Banana Pudding Parfaits


Prep Time: 15 min
Total Time: 1 hr 15 min
Makes: 10 servings

40 NILLA Wafers, divided
2 cups cold milk
1 pkg. (4-serving size) JELL-O Banana Cream Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
3 bananas, sliced

COARSELY crush 30 of the wafers; set aside.

POUR milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping.

PLACE about 1 Tbsp. of the crushed wafers and 2 to 3 banana slices in each of 10 dessert dishes; top with 1/4 cup of the pudding mixture. Repeat layers. Top with remaining wafers. Refrigerate at least 1 hour or until ready to serve.

Sweetheart Pudding Parfaits

Prep and Cook Time: 15 minutes
Yield: Makes 4 servings
Ingredients:
1box (3.4 ounces) vanilla instant pudding mix
2cups milk
2cups coarsely chopped chocolate-covered mint cookies or chocolate sandwich cookies
3/4cup thawed frozen nondairy whipped topping
1/4cup strawberry, chocolate or caramel ice cream topping, divided

Preparation: 1.Place 4 (10- to 12-ounce) parfait or stemmed glasses in freezer. Prepare pudding mix according to package directions with milk.
2.Layer 1/4 cup cookies, 1/4 cup pudding, 2 tablespoons whipped topping and 2 teaspoons sundae topping in each chilled glass. Spread layers evenly. Add second layer of cookies and pudding.
3.Top with remaining whipped topping and sundae topping. Garnish as desired.

Saucy Butterscotch Fruit Packets with Grilled Angel Food Cake (*can be grilled on the stove top with a griddle pan.)

Amount Ingredient
12 chunks fresh, well-drained pineapple
12 chunks slightly underripe banana
1/2 cup packed golden brown sugar, divided
1/2 cup chilled butter, divided
Fresh raspberries or blueberries
Vanilla ice cream

Grilled Angel Food Cake Slices:

8 thin wedges angel food cake
Melted butter

Preparation Instructions:

Divide pineapple and banana equally among 4 (10 inch) squares of buttered heavy duty foil. Sprinkle each serving of fruit with 2 tablespoons brown sugar and 2 tablespoons cold butter, cut into small pieces. Fold two opposite edges of foil and seal with a double fold. Fold ends in several times to completely seal fruit and prevent leakage. Place foil packets on grill and cook, with lid open, directly over medium heat 8 to 10 minutes, turning packets twice or until fruit is warm and sauce has thickened. Spoon fruit and sauce over Grilled Angel Food Cake Slices. Garnish with raspberries or blueberries and serve with ice cream.

Grilled Angel Food Cake Slices: Brush both sides of Angel Food cake wedges with melted butter. Grill over medium heat until toasted on both sides.

Yield: 4 servings.

Individual Chocolate Melting Cakes

10 ounces semisweet or bittersweet chocolate, chopped
4 tablespoons unsalted butter
5 eggs
1/2 cup sugar
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
Caramel sauce
Coffee ice cream

Heat oven to 325º F. Lightly coat a 12-cup muffin tin with vegetable cooking spray.Melt the chocolate and butter in a large bowl over a saucepan of simmering water. Remove from heat. In another large bowl, beat the eggs and sugar at medium-high speed until light and fluffy. Add the flour, baking powder, salt, and melted chocolate. Mix with a spoon until well blended.
Divide the batter evenly into 8 muffin tins and bake until the cakes have just cooked through, about 15 minutes. The cakes will still look a bit moist on top. Remove from the oven and let cool 5 minutes. Serve warm with the caramel sauce and ice cream.

Chocolate Mousse

1 1/4 cups heavy whipping cream
2/3 cup semisweet chocolate chips

Combine 1/4 cup of the whipping cream with the chocolate chips. Microwave until smooth when stirred with a spoon. 30 seconds at a time, then stir, then microwave again, then stir, and so on. Don't heat it too much or it will seize on you. Let it cool. Beat the rest of the cream in a mixer on high until stiff peaks form. (don't let it turn into butter) Fold the chocolate mixture in to the whipped cream a little at a time. Mix gently so you don't deflate the mousse. Chill well and serve. You can add a dollop of whipped cream on top, as well, and even sprinkle a little chocolate shavings on top.

This has been a long time family favorite....

Jell-O Cheese Cake (Rich but light)

1 large package of Lime Jell-O (8 oz)
3/4 cup sugar
1/2 pint whipping cream
1 package of Philadelphia Cream Cheese (8oz)
2 Graham Cracker pie crusts

Make Jell-O per directions on package and chill while preparing the rest of the ingredients. Do NOT allow the Jell-O to set.

Cream together cream cheese and sugar, add whipping cream. Add chilled Jell-O, whip together until smooth and pour into Graham cracker crusts. Refrigerate until set.

Apple Berry Salsa with Cinnamon Chips
Serve this popular fruit salsa with baked cinnamon chips for a unique appetizer or refreshing light dessert.

Ingredients
2 Medium apples
1 pint FRESH Strawberries, diced (about 1.5 cups)
2 Kiwi, peeled and diced
1 Small orange
2 tbs. Packed brown sugar
2 tbs. Apple jelly or apricot jam
1- Can Whipped Cream
4 Flour Tortillas
1 Tbsp Sugar
1/4 TSP Cinnamon

Preparation:
cinnamon chips:
Preheat oven to 400°F.
lightly spray tortillas with water.
Combine sugar and cinnamon and sprinkle over tortillas.
Using a pizza cutter, cut each tortilla into 8 wedges; Place in single layer On round baking stone.
Bake 8-10 min.
Or until lightly browned and crisp.
Remove and cool completely.

Salsa:
Peel, core and slice apples. Coarsely chop apple slices. Dice stawberries and kiwi and place fruit in small bowl. Zest orange to measure 1 teaspoon zest. Juice orange to measure 2 tablespoons juice. Add orange zest, juice, brown sugar and jelly to fruit mixture; mix gently. Refrigerate unitl ready to serve. Yield 3 cups.

Serve with cinnamon chips. You may garnish with whipped cream and orange zest on the cinnamon chips.

Macerated fruit--(change according to what's in season) sliced peaches, sliced/quartered strawberries, blueberries, blackberries, raspberries.

Add sugar, let sit until a syrup forms (no need to cook.) I prefer the fruit in the fridge, but if you let it sit on the counter for about 10 minutes, it's pretty much the same deal.

Add whipped cream IF you didn't just eat something creamy. You don't want cream with cream for dessert.

Add cookies or angelfood cake (I love those butter wafers that are like waffle cones, or whatever, just not, like, Oreos or chocolate-chip cookies. Maybe amaretti or butter cookies, something like that. Biscoff are good, too.)

Or gelato or sorbet--that's good, too. I also love sherbet.

Divide a made up packet of chocolate Angel Delight between six glasses. Leave it for a few minutes to set. Top it with a tin of cherry pie filling (again divide it equally). Top this with a squirt of whipped cream and a few chocolate sprinkles. Leave it in the fridge while you eat your dinner to chill. And Bob's your uncle.

Death by Chocolate
INGREDIENTS
1 (18.25 ounce) package chocolate cake mix
1/2 cup coffee flavored liqueur
5/8 cup dry chocolate mousse mix
8 (1.4 ounce) bars chocolate covered English toffee
2 (16 ounce) packages frozen whipped topping, thawed
1 (1.5 ounce) bar milk chocolate candy
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch round cake pans.
Prepare cake mix according to package directions. Pour batter into the prepared pans.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Let cake cool slightly then pierce cakes with a fork. Pour the coffee liqueur gradually over the three cake layers.
Prepare the chocolate mousse according to the package directions. Let chill in the refrigerator.
Once cake is cool break it into pieces. Layer cake pieces, chocolate mousse, crushed butter toffee candy bars, and whipped topping 1/3 at a time in a large glass bowl. Grate the chocolate candy bar over the top. Let chill in refrigerator for several hours before serving.

Strawberry Delight Dessert Pie
INGREDIENTS
1 1/2 cups graham cracker crumbs
1/4 cup white sugar
1/3 cup butter, melted
1 (8 ounce) package cream cheese
1/4 cup white sugar
2 tablespoons milk
3 1/2 cups frozen whipped topping, thawed
2 pints fresh strawberries, sliced
2 (3.4 ounce) packages instant vanilla pudding mix
3 1/2 cups milk
DIRECTIONS
In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter until well blended . Press mixture into the bottom of a 9x13 inch pan. Chill in freezer while you make the filling.
In a large bowl, beat the cream cheese with 1/4 cup sugar and 2 tablespoons milk until smooth. Fold in 1/2 of the whipped topping.. Spread filling over crust. Place the strawberries in an even layer over filling. Prepare instant pudding as directed on package, but using only 3 1/2 cups milk. Spread prepared pudding over strawberries. Chill 4 hours or overnight.
Before serving, spread remaining whipped topping over pudding.

Make a large box of jello-strawberry.Pour it into a glass casserole and put in fridge to gel.Take out and cut squares into the jello.Scoop out a square put into a tall nice glass(or clear plastic) and add cool whip,layer it till glass is full and top off with a strawberry.Cool and refreshing.Make a lot of jello if unsure of how much per glass.Make one glass per guest.Enjoy,theres always room for jello.Make as big or small as you like.

Ingredients
Small low carb tortilla shell
-bottled whip cream
-your choice of a flavored cream cheese or yogurt spread. I like apple cinnamin cream cheese.

Preparation
Spread desired creamcheese or yougurt spread on tortilla. Then spray whip cream on top. Roll Up and ENJOY!carbs- Tortilla shell- 3(at least for the brand we have)Whip Cream- 2 for 2 TBS(but i have seen 0 carb whip cream)Cream Cheese or Yogurt Spread- depending on brand and serving size.3-7. my brand is 3 for 2 tbs.
