Here's an idea:
Dear (Name),
I would like to give you my dearest thanks for your kindness and understanding in dealing with the matter of the incident on (date of the car accident). I greatly appreciate consideration and helpfulness throughout this entire process. It has been a pleasure dealing with you under these circumstances. I simply would like for you to know what your thoughtfulness has not been unnoticed. Please accept my most sincere apologies and thanks.
Thank you,
(Your Name)
Good Luck! Don't worry so much about the words but concern yourself with the meaning. Even if your thank you letter isn't exactly elloquent or well-worded, she will greatly appreciate the gesture in you taking your time to thank her.

Just write it from the heart. Something that comes genuine is more sincere and means more to her than artifical sugary words. Just tell her how much you appreciate her kindness and her willingness to work with you even though you caused the accident. Just tell her thank you and that she is the nicest person that you've met in a very long time.

Just write exactly that. Tell her thanks for being very understanding and note how you are sorry for the inconvienience you have caused her. You can also ask if there is anything you can do for her to repay her for her kindness. Help her run an errand or get around since she is without a car etc.

Dear --------
I have never been so impressed in my life by anyone as I am by you. You have shown kindness without limits. I hope to be able to pass this on one day when the chance is given to me.
To show my sincerity I would like to wash and wax your car once a month until I have re-paid the debt I owe to you.
Sincerely,

You should just let her know your feelings , Also get a Nice card (not email ) saying Thank you on front blank inside and write out some thing like this, no need for it to be long drawn out.
Dear ---
I would like to take this time and Thank you for your kindness and understanding. I can not even begin to repay you for this act of kindness and understanding, but someday because of your kind acts it will be repaid back to you , I am sure . Again best wishes and many Thanks
Sincerely ,
you

Try this, "Dear Ms. _____: Thank you very much for being so kind about the accident I caused. I am very sorry that I caused you so much trouble. I am committed to paying you the money I owe you as soon as I sell my car. I greatly appreciate the kindness you showed me, and I am told that the mechanics at the dealership said you were extraordinarily kind as well. I am grateful that, if I had to hit someone, it was someone as nice as you. Thank you. Sincerely, (Your name here)."
It's good that you appreciate her kindness, that you want to thank her, and that you're committed to making it right. Good for you!
