I am a US citizen moving to Dubai. I'll be finding a job on arrival, and understand that I must wait until a work visa is processed for me before I begin work. How long do these normally take to process?

If you come here on a visit visa it might be possible that companies take advantage of it. They have you working while still being on visit visa (what's against the Labor law) and call it "probation time"

It's much smarter to apply and land a job BEFORE coming over here, coz then you would come on an employment visa:

Employment Visa or Permit shall be issued by the Immigration Department for a foreign national in order to work in a company in UAE after the approval from Ministry of Labour and Social Affairs. Employment permit/visa allows the holder to enter UAE once for a period of 30 days and are valid for a period of 2 months. When the employee entered the country on the basis of the employment visa the sponsoring company should arrange to complete the formalities of his residence stamping. It is the preliminary stage to arrange for the health card and medical fitness examination for the employee from a government health center. The employee must undergo for a medical test and obtain a medical certificate. Once the medical certificate is issued by the health department an application for Labour Card should be submitted to the Ministry of Labour & Social Affairs within 30 days of the employees entry into the country. The next step is to submit the application to Immigration Department for stamping the residency on employee's passport. All the above formalities should be completed within 60 days of the arrival of the employee in UAE.

Officially it's said that a work permit/residence visa is done within a couple weeks. Mine took 2 weeks, a friend's one took 5 months.

Please note that all visa costs are on the employer (by law) and not deductible of the salary.

The procedure for obtaining the work visa from Dubai is, firstly the employer has to submit the application at Ministry of Labor for the initial approval. Normally it will take one week for the approval of visa committee, and sometimes they will forward the application to the inspection department for verification. If it happens, then it will take some more time to complete the formalities of physical inspection to the sponsors/employers establishment.

Once they approved, the Immigration dept will issue the visa on the next day.

i am not sure but if you are really going you are going to love this place i just got back from dubai and it is better than hawi i dove the whole time i was there although the hookers are far and few the natives are restless i pretty much got laid almost every night i was there alot of phillipinos there i had a great time just dont fall in love alot of these women are players....
