Couple of notes: First, I'm starting training for a triathlon and I know that bikes can get very expensive. Second, I know I'm going to need to get it fitted. Third, this will be my first road bike and I'm probably going to buy a tri-bike at some point later down the line once I get further along in my training. Essentially, I'm not looking to break the bank at this point, but I want a bike that will be effective for training in various environments (e.g. city, hills, flat roads, etc.) over the next year or so.

Note that the bikes listed below are 2007 models (and prices) ... you should be able to get a 2006 model for somewhat less, or step up a notch in what you get for your money.

I would suggest going to the local bike shops and test as many bikes as possible. Find someone who will take the time to answer all of your questions. Take note of the bike characteristics that you like about the bike i.e., size, materials, stiffness, etc. Then shop around. Sometimes you can find bikes that retail for over a grand from an owner that wants to get rid of it. Local bike shops also post ads where you might find a bike that fits what you are looking for. One website that I have found that has good deals on bikes is www.bikesdirect.com. They even have a tri for $995.

It is hard to point you to a specific brand because things change every year. That said, the under $1000 price category is getting bigger. Your best bet is to visit some bikes shops and tell them what your intentions are. They can point you in the right direction.
