here's a super duper easy, no bake, recipe:

No-Bake Cookies

These no-bake cookies are made with oats and chocolate, along with optional peanut butter and other ingredients. Scroll down to see more no bake cookie recipes.
INGREDIENTS:
4 ounces butter or margarine
1/2 cup milk
2 cups sugar
1 cup semisweet chocolate chips
3 to 4 tablespoons peanut butter, optional
3 cups oats, quick or old-fashioned
1 teaspoon vanilla extract
PREPARATION:
Place chocolate chips, peanut butter (if used), oats, and vanilla in a large mixing bowl. Combine the margarine, milk, and sugar in a saucepan; bring to a rolling boil. Boil for 1 minute. Combine the hot mixture with the oatmeal and chocolate chip mixture; stir well.

BANANA OATMEAL COOKIES

1 c. sugar
3/4 c. butter
1 egg
1 c. mashed bananas (about 2)
1 1/2 c. flour
1/2 tsp. soda
1 3/4 c. quick oatmeal

Mix together, drop by spoonful on cookie sheet. Bake at 350 degrees for 10 minutes.

Mrs. Field's Oatmeal Cookies:

22 min 10 min prep
24 servings

1/2 cup butter
1/2 cup brown sugar
1/2 teaspoon vanilla
2 ounces Plain Hershey Bar, grated
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sugar
1 egg
1 1/4 cups oatmeal
1 cup flour
1/2 teaspoon baking powder
1 (6 ounce) bag chocolate chips

1. Cream butter and both sugars.
2. Add egg and vanilla - mix well.
3. Take 1 1/4 cups oatmeal - put small amounts in blender and blend until it turns to powder - set aside.
4. Grate Hershey bar - set aside. Combine oatmeal, flour, salt, baking powder, and baking soda.
5. Add this to butter/sugar mixture and mix well.
6. Add chips and grated chocolate.
7. Shape dough into golfball sized cookies.
8. Bake on ungreased cookie sheet for 6 mins. at 375.

FAMOUS QUAKER OATMEAL COOKIES

3/4 c. vegetable shortening
1 c. firmly packed Imperial brown sugar
1/2 c. Imperial granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla
3 c. Quaker oatmeal, uncooked
1 c. all-purpose flour
1 tsp. salt
1/2 tsp. soda

Preheat oven to 350 degrees. Beat together shortening, Imperial sugars, egg, water and vanilla until creamy. Combine and add remaining dry ingredients; mix well. Drop by rounded teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. For variety, add chopped nuts, raisins, chocolate chips or coconut. Makes about 5 dozen cookies.

INGREDIENTS
1/4 cup margarine, softened
2 tablespoons fructose sweetener
2 egg whites
3/4 cup applesauce
1/4 cup unsweetened apple juice concentrate, thawed
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1 1/2 cups rolled oats
1/3 cup chopped raisins
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the margarine, fructose and egg whites until smooth. Stir in the applesauce, apple juice concentrate and vanilla. Combine the flour, baking soda, cinnamon and, if desired, salt; stir into the applesauce mixture. Finally, mix in the oats and chopped raisins. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 15 to 17 minutes in the preheated oven, until cookies are firm to the touch and lightly browned. Cool 1 minute on the cookie sheets before removing to wire racks to cool completely. When cool, store in an airtight container. I like to keep mine in the refrigerator.

Traditional Oatmeal Cookies with(or without) Raisins
First sift together
* 2 cups flour * 2 cups oatmeal * 1 tsp. baking soda * 1 cup sugar * 1 tsp. salt * 3/4 cup butter softened * 1 tsp. cinnamon * 2 eggs unbeaten

-Optional- Mix with 1 cup chopped raisins

Cream the butter, sugar and eggs together. Add half of the flour and mix well. Add all of the oatmeal and mix well. Add the remainder of the flour, mixing it in just enough to blend it in thoroughly. Drop into small cakes and bake at 400° F. for ten to fifteen minutes.
