I am bored, bored, bored, with pork chops/rice/corn for dinner. Since I really have no kitchen skills beyond the most simple, does anyone have a really great chicken recipe? Failing that, a really great marinade for steak?

Chicken Paprikash

2lb boneless, skinless chicken breasts, cut into one inch dice.
2 medium onions, halved and sliced thinly
4Tbs butter
14C paprika, or more to taste*
2-3C chicken broth
16 oz sour cream
1/2C flour
*If you can get smoked paprika, substitute 1-2Tbs of that for 1-2Tbs of regular paprika

Over medium heat, melt the butter and add the onions, cooking them 3-4 minutes, taking care not to brown them.

Raise heat to medium high and add the chicken. Cook the chicken until not pink remains on the outside.

Add the paprika and stir, coating all the chicken and onions.

Add the broth, raise heat to high. Cook until chicken is done throughout.

Mix the flour and sour cream add to the mix, stirring and cooking until the sauce is thickened and creamy.

Serve over rice, noodles or kasha.

Here's an easy recipe inspired by one from Greece:
- Take whatever chicken pieces you have (if you want to brown them first for looks, go ahead - if it's just my family, I never do...) and put them in a casserole dish.
- Chop up a bunch of potatoes into cubes (the size of the potato cubes will depend on the type of chicken pieces you use - if you use large, bone in pieces, keep the potatoes a bit larger so they'll cook more slowly)
- Take a whole bunch of fresh garlic - it has to be fresh and there has to lots of it - like 1 whole head of garlic (adjust as needed) - peel the garlic cloves but don't chop them
- Toss the garlic and the potatoes together on top of and around the chicken pieces
- Now hit this with a lot of dried oregano - I'm not talking one or two teaspoons, I mean lots
- Drizzle some olive oil and chicken broth into the casserole dish - there should be a substantial amount of liquid in the dish - about halfway up the sides - then give the top a little more oregano
- Bake at 350 until done - timing depends on the type of chicken - I would check it after 45 minutes, just use an instant read thermometre on the chicken, or piece it with a fork to make sure the juice runs clear
- When it's ready, take it out and squeeze a bit of lemon over top
Serve it with a big green salad. You can also add vegetables to the caserole, but veggies like carrots or onions that turn sweet when you cook them don't work because the garlic turns sweet when baked. Okra works well if you like it. You will figure out how you like it after cooking it a few times (eg less garlic, more oregano, less liquid, more lemon). Overall a very flavorful, easy, one dish meal.

Chicken Casserole. Very easy. Put one cup of long grain rice in bottom of greased casserole dish. Put 1/2 cup of chopped onions, 1/2 cup of chopped celery on top of rice, salt and pepper, put aside. In a separate bowl, mix 1 can of mushroom soup and 3/4 cup of mayo. Slowly add 1 and 1/4 cups of water, and continue mixing until well blended. Add half of the mixture to the rice, celery, and onions. Do not stir. Place chicken on top and pour the rest of mixture on top of chicken. Cook in the oven at 350 degrees for one hour or until chicken is done. This is a family favorite. Hope you like it!

Italian Dressing chicken

Marinade chicken pieces in Fat Free Zesty Italian Dressing, overnight or all day.

Put chicken and marinade in a casserole dish, and bake, covered at 375 deg F for about 1 hour.

Be sure to spray the casserole dish with non stick cooking spray.

Serve with rice, noodles, or potatoes and a green salad.

Yesterday I seared some boneless chicken in a large skillet, then added canned tomatoes (crushed and diced), some garlic, a little olive oil, and some basil. I let it simmer until the chicken was cooked, then served it with pasta. It's not terribly original, but it was really good and easy to make.

Cream of Chicken Breast

INGREDIENTS
4 skinless, boneless chicken breast halves
1 pinch poultry seasoning
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a 9x13 inch baking dish and season to taste.
Mix soup with soup can of milk/half-and-half/water (if desired, use 2 cans to make sauce thicker). Pour soup mixture evenly over chicken and bake in the preheated oven for about 1 1/2 hours or until chicken is no longer pink and is tender.

Lemony Chicken Chunks

• 3-4 boneless skinless chicken breasts, cubed
• 1/4 cup flour
• 3 cloves garlic, minced
• 1/4 cup olive olive oil
• Salt and pepper to taste
• 1/4 cup lemon juice

Heat olive oil in skillet over medium heat. Combine salt, pepper and flour. Add chicken and coat with flour mixture. Cook in olive oil until chicken is fully cooked and lightly browned. Add garlic and cook another 1-2 minutes, then add lemon juice and cook 1 minute longer. Serve with rice pilaf or your favorite rice.

Notes:
Very simple and very good. You can adjust lemon juice to your taste. I enjoy the sour taste. Also very good with fresh chopped mint.

Chicken...
what i like to do is put chicken in a roasting pan (pyrex)
cut up onions and potatoes, throw them into the pan, salt, pepper, orengano, garlic powder (papprika if you like ) sprinkle a little olive oil (just a little) and cover with foil for and hour or so, then let it cook without foil until done (350degree)

Dice 1/2 med. onion. 1/2 bell pepper place into med. bowl with 2 cans any flavor condensed soup. (celery, mushroom, etc.) Add 1/2 can milk, stir. Pour small amount into casserole dish, add chicken cuts of your choice, pour rest of soup mix over chicken. Cover with foil, bake 350 for 1 hour, turn down to warm until ready to serve, over rice if you like.
