Fill them with Nutella (the chocolate spread, yummy), any kind of jams, plain sugar, icecream, fruits, whatever.
For adults, sprinkle some sugar on top, pour some dark rhum or grand-marnier and light a match (flambé process). Very good

Try this for a different twist:
Cinnamon Raisin Bread Pudding Pancakes
8 slices cinnamon raisin bread
2 cups no fat milk
3/4 cup all purpose flour
2 T. sugar
2 T. baking powder
1/2 teas. salt
2 eggs, slightly beaten
3 T. butter, melted
Trim crusts from bread and cut bread into 1/2 inch cubes. Place in a large bowl. Pour milk over bread and let stand until very soft and beginning to fall apart, stirring occasionally, 10 to 15 minutes
Stir flour, sugar, baking powder and salt into bread/milk mixture. Stir in eggs and melted butter until blended.
Lightly coat a griddle with oil or non stick spray. Place over medium heat. When hot, drop 1/4 cup batter onto griddle for each pancake. Cook until bubbles appear on top and underside is golden, about 3 minutes. Turn and cook on the other side until cooked through and bottom is golden, about 2 minutes. Serve with syrup.
Makes 16 pancakes

APPLE CREPES
CREPES:
2 eggs
1 1/2 c. milk
1/2 tsp. salt
1 c. flour
2 tbsp. melted butter
FILLING:
8 apples
3 tbsp. butter
2/3 c. brown sugar
1 orange rind, grated
1/4 c. raisins
Beat together crepe ingredients. Cover and let stand for 30 minutes. Cook in small crepe size pan (greased on both sides). Peel apples and cook until tender in large pan. Add remaining ingredients. Place filling in center of crepe and roll into crepe shape.

simple pancake recipe is plain flour, egg and milk, whisk until it looks like batter. Heat a pan with oil or butter and fry some of the mixture. You always have to throw away the first one for some reason, it's just not as good as the next one. Once you've made them just lay out loads of things for people to help themselves to. Ice cream, maple syrup, golden syrup, sugar, lemon, strawberry jam.
I would avoid putting alcohol in it as you would need to be very careful as if it touches the gas flame it will flambee and you'll have a pan of fire on your hands.

this is how i make my pancakes.
1 egg
1 cup flour
3/4 cup milk. you can replace this with the alcohol if you like. but not completely.
1 tablespoon sugar
2 tablespoons oil
3 teaspoons baking powder
1/2 teaspoon salt
u can add alcohol if you like.
