Chocolate Chip Muffins:

1¾ hours 55 min prep
12 servings
12 muffins

1 3/4 cups all-purpose flour
1/2 cup whole wheat flour
2 1/2 teaspoons baking powder
1 banana, mashed and ripe (approximately 1/2 cup)
1/2 cup brown sugar, packed
2 eggs
1 cup milk
1/3 cup butter, melted
1 cup chocolate chips

1. Preheat oven to 400 degrees F.
2. Butter 12 large muffin pans well or line with paper muffin cups.
3. Sift together flours, and baking powder.
4. Reserve. Combine banana with brown sugar until smooth.
5. Beat in eggs, milk and melted butter.
6. Stir in dry ingredients only until blended.
7. Quickly stir in chocolate chips.
8. Do not overbeat. Spoon mixture into prepared muffin cups.
9. (An ice cream scoop works well for this). Bake 25 minutes or until browned slightly.
10. Cool on racks.
11. Preparation time - 15 minutes Cooking Time - 25 minutes Yield - 12 large muffins
12. I substituted 1/3 cup canola oil instead of butter.
13. The banana and chocolate chips give the muffin a nice flavour and it's not overly sweet. Tastes almost healthy :-)

i love banana muffin and i found this on the net and have done it 5 or 6 times they go so fast


3 ripe bananas, mashed
1 stick of margarine
1 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
dash of salt
1 teaspoon of vanilla


Preparation:
Beat the margarine and sugar in an electric mixer until light and creamy. Add the eggs, flour, soda, salt and vanilla till smooth. Mix in the mashed bananas. You can also add a cup of chopped chocolate, pecans or walnuts.
Bake at 350 degrees in a greased and floured loaf pan or cup-cake pans. Makes 2 loaves (bake about 1 hour) or 5 dozen mini muffins (bake 18 minutes). The loaves are done when cake tester inserted into the loaf comes out clean and the loaves are a golden brown.
Baking time will vary depending on your oven.

Add 8 oz of scrummy to a basic muffin mix, cook till golden brown. ;-)

White chocolate and macadamia muffins:

2 cups (300g) self-raising flour
⅔ cup (150g) caster sugar
¾ cup (140g) white Choc Bits
½ cup (75g) coarsely chopped macadamias, toasted
60g butter, melted
¾ cup (180ml) milk
1 egg, beaten lightly

Preheat oven to moderately hot 200-210ºC / 400-425ºF / Gas Mark 5

Grease a six-hole (180ml) muffin pan [smaller pan if you prefer 9 or 12 muffins]

Combine ingredients in a large bowl, mix well. Spoon mixture into prepared pan. Bake for about 25 minutes.

Chocolate honeycomb muffins:

2 cups (300g) self-raising flour
¼ cup (55g) caster sugar
1 cup (190g) white Choc Bits
100g chocolate coated honeycomb, chopped coarsely
1 egg, beaten lightly
60g butter, melted
1 cup (250ml) buttermilk
¼ cup (90g) honey
1 teaspoon vanilla essence

Preheat oven to moderately hot: [as above]

Grease 12-hole (80ml) muffin pan

Combine flour, sugar, Choc Bits and honeycomb in a large bowl, stir in combined remaining ingredients. Spoon mixture into prepared pan. Bake in oven for about 20 minutes.
