Redoing the shower could take 1 to 2 days (depending on the plumber). My shower was redone last weekend. The plumber (my cousin) was a moron, so it took a while longer. My brother laid the tile and he had to redo a lot of his work (he didn't even level the tub). If the tile guy didn't have to redo a lot of work, it could've been done in 1 day. You would likely need to add 12 to 24 hours to the project to allow for adhesives to dry (before you can use the shower).

I would give myself a week and a half to redo a shower if you are pulling out and insert and tiling the shower. The problem with a shower is that only one person can work at a time. Scheduling personnel correctly is a must, along with materials. If you are not doing anything fancy, like custom tile, and you are swapping inserts, 4 to 5 days. Toilets take about 2 hours.

Depends if you know what your doing and depends on what kind of damage is done behind walls of the shower. If there was water leakage behind walls you will also have to cut out all the existing dry wall.
